Baked Macaroni and Cheese I

I was looking for a simple, basic, but tasty Mac n Cheese recipe. I would have to say this is the one! The recipe is excellent as it is, only made minor changes. One of the most critical, I think for taste was to use the same "cast iron ' pan through the whole process. From frying the bacon to cooking the onion and garlic, to making the roux. Then finally in the end adding the cooked pasta to the pan and then putting the same pan in the oven. I didn't measure exactly how much cheese I used, but it was probably at least a cup more! Everyone loved it, even my non onion loving daughter had to take leftovers to school this morning! This will be added to my recipe box !!

Pan Seared Lemon Tilapia with Parmesan Pasta

Very simple and very good. I doubled everything and was engough for three people. I also used shredded Parmesan about a cup worth,the wife and I have a cheese thing. Worth making again, if you like seasoning just add more then a pinch I think thats why some felt it was too blan.

Baked Potato Soup

This soup is freak'n awesome. My wife had mentioned while we were in a restaurant about baked potato soup so I looked it up. This recipe caught my eye, I tell you what it barely makes it out of the pan before I start sampling it! I substitute green onion for the parsley and add about 1 tablespoon of butter when adding the flour. Other then that you cant go wrong with this one. If you dont like this get your taste buds checked out! Two thumbs way up !!

Mom's Best Pork Chops

Excellent, added Italian bread crumbs to crackers and also some pepper and Italian seasoning to the egg mix. Maybe over kill with the italian seasoning but it came out great! Will definitely be making again.

Campbell's Skillet Chicken Parmesan

Quick and easy very enjoyable, I did add some fresh garlic while cooking the chicken and some in the sauce. The whole family thought it was great. Will make again.

Beer Butt Chicken

I have made chicken this way numerous time. One thing I do is buy those cheap aluminum pies pans in like the dollar stores. I set the chicken on the beer holder rack thing in that, on the grate of a charcoal grille. I also pour some beer in the pan just enough to keep some fluid in it while chicken cooks. Also I think something that is important. On a charcoal grille get the coals good and hot, only around the outside perimeter of the grille. Leave the coals on the outside so that the chicken sets in the pan in the middle. That way it does not get over done. I have found at least an hour cooking this way for each lb. chicken you cook. Seasoning is up to what you like, me the more the better. I coat the chick in olive olive then softened butter and season it up. Fridge it for a while, then stick it on the grille and walk away, of course with the lid on..if it will fit. Gotta be careful your chicken isnt too big. Then when it looks done just check it with a meat thermometer,to be safe. Good stuff!

Sausage Hash Brown Bake

I guess I had too high of expectations for this. Whatever I had in mind did not come out the way I thought it would. I thought it would have more consistency, instead it was a little on the messy side. I would have liked the hash browns to have been I'd say more done, crispier I guess? I did leave in the oven longer then it calls for to try and brown the top more. My wife claims she enjoyed it but it fell a little short in my opinion. I'm thinking maybe some of the reviews that added egg might have a good idea, I think that might hold it all together better. Will have to make another shot at it.

Mom's Buttermilk Biscuits

The whole family always loves these, I have made them very often,especially go good with any kind of meal that involves gravy. My daughter likes to have the leftovers in the morning warmed up with some jelly on them. Basic simple easy recipe that always pleases, what more could you want?

Best Easy Chicken Croquettes

I have always enjoyed chicken croquettes,but lately never able to find in the grocery store. These were a nice find. Of course I made them in the traditional triangle shape. But had a hard time coming up with six out of the recipe. Next time might up the ingredients slightly. Overall a nice change to have for dinner.

Fried Chicken Tenders

I actually ended up using Italian salad croutons, just crushed them up in a big zip lock bag. Also used a little more cayenne pepper and some season salt. A good recipe because I believe you can add whatever seasoning that works for you. Cooked quickly in a deep fryer at around 375 degrees. These were a big hit with everyone. Will definitely make again!

Honey Mustard Sauce

Have always wanted to make a good honey mustard sauce. This was better then good and simple to make! The whole family enjoyed it, my sons also ate it and they always said they do not care for mustard. Will definitely make again!
