Eclair Cake

Thanks for sharing this recipe. I made it this morning, and I was skeptical that anything so simple could be worthwhile. I was very pleasantly surprised at how good it was. I used up a can of german chocolate frosting and used half sugar free pudding mix, since that was all I had on hand. The whole family enjoyed it. Thanks again.

Aussie Chicken

Thanks so much for this tasty recipe. I followed the recipe pretty closely, except for leaving out the season salt. We all enjoyed it; I will make this again, probably on a weekend when I have time to cook. I put the chicken in a gallon sized freezer bag and pounded it with a rolling pin--no messy cleanup.

Brownie Frosting

This frosting is easy and delicious. I don't always get all of the chocolate chips to melt, but I think it adds an interesting texture to the frosting. I double the recipe and use it to frost a double batch (two boxes of 9X13 pan size mix) in a jelly roll pan--12 1/2 by 17 1/2 inch. The frosting makes them special. Thanks for posting this recipe!

Salsa Chicken Rice Casserole

Thanks for this recipe, Gweneth. I sauteed the onion, along with a couple of stalks of celery and a green pepper. I also added some frozen corn. Loved it! Next time I make it, I'll throw in a can of black beans, too.

Blueberry Zucchini Bread

Thanks so much for this recipe! I've made it twice now, and my guys love it. I used frozen blueberries, so I put in a whole 16 oz. package--didn't bother thawing them. I have a Wilton pan w/eight 2 1/2" by 3 1/2" loaves in one pan--baked for 25 minutes. Perfect!

Hamburger Stew

I made this for dinner tonight--I didn't think I was going to like it at first, but the closer I got to the bottom of the bowl, the more I liked it. I added a can of corn, 1/2 t. black pepper, and a clove of garlic minced. Thanks for the recipe.

Lemon Poke Cake II

My family loves this cake. My recipe is just slightly different. Instead of lemon pudding mix, mine calls for dry lemon jello powder to be added to the batter. #2 son always asks for this cake for his birthday.

Delicious Ham and Potato Soup

Original Chex® Party Mix

I always make this recipe in the microwave in a 5 quart corning casserole. Melt the butter, add seasoned salt & I use A-1 instead of Worcestershire. Stir to blend. Dump in mixed nuts and pretzels. I like to stir with a silcon spatula--it doesn't seem to break the cereal as much. Dump in the cereal. Stir to blend. Microwave 2 minutes on high. Stir one final time and microwave one more minute. Mix is not crispy when it first comes out of the microwave, but it crisps up nicely after a few minutes. You can make a several batches quickly this way, which is nice if you're giving it for gifts.

Apricot Glazed Pork Roast

I made this recipe this week, with one change: the recipe I had called for only 1/4 cup of chicken broth. It was delicious, and the sauce wasn't too thin. The leftovers made great barbecue sandwiches, too. I appreciated how easy it was, and that it used ingredients I already had on hand.
