Roasted root veggies are the way to go in the winter. This recipe makes a ton, so make sure you have a pretty big sheet pan or roasting dish. I add cayenne and cinnamon to all my roasted veg for a sweet/spicy kick.

Lentil Soup I

I liked the concept, but mine turned out very thick, like mashed potatoes with some lentils thrown in. Also, the color was not very appetizing, kind of a greyish-brown.

This is a very flavorful soup, good for when you want something a little different but still comforting. You need to use really good quality curry powder. If your grocery store has an Indian food section, get it there rather than in the regular spice aisle.

Artichoke Spinach Lasagna

I brought this to book club and it was a huge hit, even with non-vegetarians. I used no-boil lasagna noodles, but otherwise followed the recipe exactly. Next time I will add more heat to the filling, maybe add some red pepper flakes and more garlic.

I think this is a good vegetarian option for a sandwich filling, but I agree with several other reviewers that it doesn't really taste like tuna salad. I will probably try it with different types of beans to play with the texture a little.

Quinoa, Beet, and Arugula Salad

This recipe made me really happy. I didn't alter a thing and the flavors balanced perfectly. I especially liked the beets and the goat cheese. This was the first quinoa recipe I've tried that didn't taste like something from a silo. I'm trying to go vegetarian, and recipes like this one certainly help ease the transition.

Spiced Quinoa

Yum! The flavors and textures in this dish are really well balanced. The only substitute I made was toasted almonds instead of pine nuts. I'm really excited to have this for lunches this week. The extra bonus is that my house smells delicious.

This really is delicious soup. I follow the recipe almost exactly; the only addition I make is fresh thyme. Besides being yummy and fairly foolproof, I like that I probably have these ingredients on hand right now.

This is a solid base recipe. I didn't give it 5 stars because I tweaked it enough that it became my own recipe. But know that you can start with these basic ingredients and proportions and make a delicious soup.

Pasta Primavera with Italian Turkey Sausage

Very flavorful and versatile. You can substitute or add pretty much any veggie you want, or even swap out the protein. I substituted tortellini for the farfalle since that's what I had on hand. The addition of the bouillon helped balance out the tomato sauce--I think it's the key to this dish. I didn't add quite the amount of oil called for since there was a fair amount of fat rendered from the sausage.

Spicy Shrimp Creole

Very tasty, and you can adjust the amount of heat to your tastes. I added diced bell pepper along with the onion and celery. It's a versatile dish, so you could add many different kinds of veggies. Andouille sausage would also be a nice addition.
