Ricotta Cheese Cookies

I had never made these before but they came out perfect! I followed the recipe exactly, only added about 1/2 tsp more vanilla just because I was afraid they would be too blah without it. I will use this recipe over and over again! Also, the glaze only lasted for half the batch so I just left the other half plain. Either way they are delicious!

Kielbasa with Peppers and Potatoes

Used reduced fat kielbasa and sauteed minced garlic, chopped onions and sweet peppers separately then added to kielbasa/potatoes. Worked out great! My 10-year-old daughter said, "We'll definitely have to have this again!" It's only the two of us but if you are making this for four or more I would at least double this recipe! We only had a very small amount leftover!

Apple Squares

I didn't expect this to be so cake-like; however, it is extremely good! My friend didn't want to try it because she doesn't like walnuts (nor do I!) but after convincing her to try it she thought it was delicious as well! The only thing I would suggest (if you like desserts to be sweet) is to melt frosting and drizzle it on top. I had the leftover cinnamon stick dip from Pizza Hut and used that as the topping and it really made the difference!

Delicious Christmas Cookies

Luckily I didn't have the problems everyone else did with them sticking to the cookie sheets. The only things I would change is to at least double the recipe because it definitely does not make much and I'm personally not a big fan of coconut so I would cut it back by about 1/2 cup. Other than that, these were simple to make and very tasty! Thanks!

Famous Pork Chops

For those of you who like to cut back on the calories, I made the following changes: Used reduced fat crackers, Egg Beaters, and only 1/4 cup of margarine instead of 1/2 cup of butter. And the pork chops were still delicious and incredibly moist! Also, I took another reviewer's suggestion of broiling the chops after baking to "crisp it up" a bit and give it a nice golden brown look.

Pumpkin Hummus

Okay, so the taste was pretty good. I took others' suggestions and added cumin...pretty good but not sure if it was necessary. My only complaint is that this was a complete mess! I don't know why but this made enough to feed an army! All of the ingredients were overflowing in the blender. It was not exactly what I had in mind. If I make it again (*doubtful), I will definitely scale it back quite a bit.

Best Chocolate Chip Cookies

Followed the recipe exactly (minus the nuts) and it came out perfectly! I've never had my chocolate chip cookies look so perfect! I won't be ashamed to display them on the Christmas cookie trays this year! Definitely a keeper! Thanks!
