Pumpkin Pie Cake I

This is a tasty, delicious, and flexible recipe. I didn't have a 29 oz can of pumpkin, so I used a 21 oz can of pumpkin pie mix, added a bit more cinnamon, clove and ginger, didn't add salt or sugar, and figured it was close enough. I only had a 15 oz box of cake mix, too. But it didn't matter - it tastes like pumpkin heaven and I ate it till I didn't feel good anymore.

No Crust Pumpkin Pie

Tastes good, but it is definitely a different texture than pie filling. It also took 25 minutes longer to bake than the recipe said!

Ranger Cookies III

These tasted great! I only had one stick of butter, so I added 1 cup of unsweetened applesauce and 1 tbsp oil in place of the rest of the butter. I also subbed half the raisins for craisins, just to vary things up a bit. I knew I wanted chocolate in there too, so I left out 1/2 c of sugar and put in 1 c of dark chocolate chips. It kind of sounds like I didn't even make this recipe... whatever, they tasted good and my houseguest loved them!!!

Mexican Grilled Chicken

I made this several times over the summer, and it has been a hit with everyone... kids included! For less sodium, I made my own taco seasoning (cumin, chili powder, garlic powder, paprika, salt and pepper all to taste). The end result tastes pretty much the same whether you use reg mayo or fat free sour cream.

Dijon Chicken Salad

I made this for a baby shower, and the guests loved it! We had no honey, dijon mustard, or chives... subbed maple syrup, spicy brown mustard and scallions. Tasted great even with the changes (I don't know if I would use maple again, but it was fine). Thank you!
