Homemade Albondigas Soup

Having lived in Phx. for over 20 yrs., I've had a lot of good Mexican food. This soup rates right up there with the best! I halved the recipe for the 2 of us. That won't happen again!! Love leftovers!

Zesty Pita Chips

Why didn't I think of this? I love Staceys pita chips, but they are a bit pricey. These are so easy and can be made with whatever seasonings/herbs you like. I've tried creole, parsley, black pepper, parmesan cheese, just pick your favorites and experiment. Thanks for a great recipe!

Mushroom Melt Stuffed Chicken

I changed the servings to 4 on the recipe. Imagine my surprise when it called for 76 cups shredded cheese?? I figured out how much to use and it turned out great. It was a bit too salty and I think it might have been because I used a thick sliced bacon. Next time I'll try it with thin sliced bacon. Your girlfriend is a lucky gal!

The Best Zucchini Fritters Ever

These were so good!! We even reheated them for lunch the next day. For the leftovers I added a dollop of sour cream. As good as the day before, and that doesn't always happen.

Stuffed Blueberry Toast

I've made this twice when we've had company and got rave reviews both time. It's definitely not a low calorie dish, but for an occasional treat I think it's great. I used French bread and it worked just fine.

Coconut Tilapia with Apricot Dipping Sauce

Simple Tiramisu

Not a traditional tiramisu, but it's really tasty!! Made it for a family get-together and everyone raved. Didn't use the cocoa powder on top because I didn't have any.

Spinach Rice

Super good! Used jasmine rice because that's what I had, and for the same reason used shredded cheddar. Used Tabasco jalapeno sauce because I didn't have peppers. Served this with Mexican fish and black beans. Both recipes from this site. Better than any Mexican restaurant!

Try It You'll Like It Kraut Casserole

Very good. My husband loves sauerkraut and I'm just sort of so-so about it. The combination of ingredients tames the sauerkraut flavor and makes it "just right". The only thing I changed was cutting the carrots smaller. I think this would work with other cuts of pork (the bonier ones). This is a keeper.

Almond-Topped Fish

This was really good! I was a little concerned that the dill and onions might overpower a mild fish. Wrong. I used swai which is a very mild fish. I followed the recipe exactly except I used dried parsley since I didn't have fresh.

Fish Chowder

This was great! I just made 1/2 for the 2 of us. I didn't have clam juice, so I added a can of chopped clams. I also added a splash of white wine. Sherry would be good also. I used swai, my new favorite white fish and homemade chicken stock.

Dave's Low Country Boil

Tried it several times and it's always a hit. Didn't have fresh corn so used the frozen niblets. Also added an onion and a lemon. I don't serve this on newspapers because I don't like the idea of eating ink and I know how easily it comes off on my hands just reading the paper. I have a huge platter that I use to serve it. (I don't peel the shrimp)

Chicken Breasts in Caper Cream Sauce

This was very good! The only thing I changed was half and half instead of whipping cream, because that's what I had. Agree with others that you should double the sauce. I did 2 breast halves, so halved the sauce. Shouldn't have, it was too good.

Fresh Asparagus, Tomato, and Feta Salad

I made this using some leftover asparagus. So much better than trying to reheat the asparagus, which usually over cooks it. I was making a salad for two so I just eyeballed the amounts. I left out the sesame oil since I didn't have any, but it was delicious anyway.
