Pumpkin Bread Puddin'

I gave these 3 stars because my cookies did not come out chewy at all (but that may have been my fault). Otherwise, they tasted great!

Slow Cooker Buffalo Chicken Sandwiches

Lemon Cheesecake Squares

I made this for a company BBQ and everybody LOVED it! It was so easy to make and it was nice I didn't have to make it in a springform pan. Didn't make any changes to the recipe but couldn't find seedless raspberry jam so just used preserves - couldn't tell the difference.

Blueberry Fruit Salad

I like blueberries, but found this a little blueberry heavy. Next time I might scale back to 3 cups instead of 4. Otherwise, everyone loved it!

Mushroom Pork Chops

This is the best pork chop recipe I've ever made. I added white wine and milk to the gravy and it was the best - I could've eaten that by itself with rice. I will absolutely be making this again and I have a feeling we'll be fighting over the leftover chop for lunch tomorrow!

Breakfast Enchiladas

I really liked this recipe. I could have used fresh New Mexico chiles but I was making the recipe for a cooking challenge and had to make it with ingredients that are widely available. I only had enough potato/ham mixture for four enchiladas - maybe I filled them too much? My husband really liked this and I will definitely be making it again.

Beef Marinade II

I let the beef marinade for 4+ hours - everybody really liked it. I didn't have a lemon, so I used about 1 tsp lemon juice instead. Will definitely use again!

Chocolate Lovers' Favorite Cake

I made this cake to bring to the office and they LOVE it! I've heard a couple "this is the best cake I've ever had"s. I made it with the suggestion of vanilla instead of almond extract and glazed with half of the Easy Chocolate Bundt Cake Glaze (from this site). I must admit, it's pretty darn good!

This was a good recipe, though next time I will definitely cut back on the amount of sugar. Once the applesauce cooled, the remaining liquid was almost syrup.

Pumpkin Coffee Cake

I brought this coffee cake to work and it was gone within a matter of hours. SUPER moist and great taste! I used a whole can of pumpkin and baked in a 9x13 glass pan. It turned out perfect and I am sure I'll be making this again.
