Banana Sour Cream Bread

Reviewed: Feb. 9, 2011
This is a great recipe. I had to modify it a little because my fiance is diabetic, and it was the best batch of banana bread i have ever made. I used apple sauce instead of all the butter. Used whole wheat flour instead of all white flour. Used artificial sweetener for half the sugar. And i did add some chocolate chips along with the walnuts. I had to bake my two loafs for quite a while longer than the 1 hr. The cinnamon and sugar mixture on the bottom was genius. It added a sweet crispy texture in contrast to the nice moist banana bread and was quite good. Overall, the best banana bread i have made.

Buttery Pan Rolls

Great recipe. Took time but fortunately it was broken up in stages, which works for me! I made it with half whole wheat flour and it turned out great. Very good buns! I am quite pleased with the overall taste, appearance and texture and I quite like the slight crunch on the bottoms.

Vernita's Broccoli Casserole

Reviewed: Mar. 27, 2011
Loved this casserole. I made it as a side dish with our pork chops and it was great! The crunch of the Ritz on top really made this dish stand out. I didn't have enough cheddar on hand but it was still really good. I did, however, cook the rice separately as we do not use instant rice-therefore i omitted the water. I will be making this casserole again !!

Crispy Mashed Potato Pancake

Reviewed: Jul. 28, 2011
Delicious. I skipped the italian seasoning as i had none, but this was to be our whole meal so I added green onions, parmesan cheese, and fried bacon chunks. I should have added some flour as others commented since they were a bit mushy, but instead I fried them for longer than 8 minutes, until I could safely flip them. Also would have helped to have less on my pan. Turned out great and will definitely make this again!
