My Chili

Nice chili recipe. I made a few adjustments to suit our taste. Subbed 2 cans of Rotel tomatoes with green chilies for 2 cans of the stewed tomatoes, added an extra can of kidney beans, added an additional tablespoon of chili powder and also decided to throw in a 1 1/2 teaspoons of cumin because I LOVE cumin. Really good!

Slow Cooked Corned Beef for Sandwiches

The best recipe I've tried for corned beef. The beer gives it a great added flavor. I used the meat for sandwiches and everyone loved it. This is now my go-to recipe for cooking corned beef.

Chocolate Cream Pie II

Outstanding! I read a lot of the reviews and took the following advice... 4 egg yolks, 4 tablespoons of corn starch and replaced 1/4 C of the milk (I used 2C half-n-half and 3/4 C of 2% milk) with Baileys Irish Cream. The pie set up perfectly. I used an Oreo crust and made my own whipped cream. Taking the 10 minutes to do it is absolutely worth it. This was by far the most decadent, rich and amazing chocolate pie I have ever had. A small slice goes a long way!

Cajun Chicken Pasta

We loved this. The only thing I would do differently next time is to cook the peppers, mushrooms (used baby bellas) and onions at the same time the chicken goes into the pan because I prefer a softer texture to them. I did add some extra Cajun seasoning due to the other reviews but not enough to really say I made huge spice changes to the recipe. Also, I think the key to any good pasta recipe is buying the best pasta you can and not the box stuff from the grocery store. I'll be making this again.

Stuffed Green Peppers I

We love this recipe and make it at least once a month. The only changes I make now is to use the rice cooker for the rice because I'm notorious for under cooking the rice, which is no fault of the recipe. Other than that I made it just as written. The other change is that I use three large green peppers instead of six since there are only three of us. Makes an entire meal!

Grandma's Corn Chowder

Great corn chowder recipe. I gave it four stars only because I did make some changes that other have mentioned that I believe made it a bit better than the recipe as written. First of all, I doubled the bacon for my bacon loving husband. I did as others have mentioned... used chicken stock instead of water and I used two cans of creamed corn and one of regular corn that I did not drain. We really enjoyed this chowder and my husband and son both requested that I make it again. I think this is a very versatile recipe that you could experiment with.

Lentil Soup

Absolutely delicious! I read through the reviews and took some of the advice. I added the crushed tomatoes and wine at the end so that the lentils would cook without soaking first. I also didn't measure my lentils and just used an entire bag. As other reviewers mentioned, it is MUCH better the next day. We liked it the first day but LOVED it the second and third day. This recipe made it into permanent rotation here.

Chicken and Rice Casserole I

This just wasn't a dish for me. I can see how it's really easy to put together if you are in a pinch and have just a couple of minutes to throw something together but it really isn't worth it. My family thought it was oddly flavored, overly salty because of the onion soup mix and requested that this not make it into the dinner rotation again.

Chicken Tortilla Soup I

Made this last night and followed some suggestions from other reviews. You really can't go wrong with this recipe. Here are the changes I made. 64oz of chicken stock for the liquid, 28oz can of white hominy because that is what my store had, 2 cans of diced green chilies, 2 cans of corn and black beans, 1.5tsp cumin instead of oregano. After sauteing the onions and garlic I put everything into a large stock pot, brought it to a boil, then simmered for just over an hour. It was awesome! My 19yo son usually hates anything with chili powder and cumin and he asked me to put this in his college recipe binder so he can make it on his own.

Chicken Suiza Cornbread Bake

Super tasty! The whole family really liked it. I used the suggestion of 2 eggs instead of the egg substitute. The package of sliced mushrooms I had was 6oz instead of 4. I also used a whole (4oz) can of diced green chilies but would actually use two cans next time. This recipe is going into my recipe rotation.

Cheesy Ham and Hash Brown Casserole

Made this last night for dinner and my family loved it. I used the O'Brien hash browns that had onion and peppers. I also didn't use sharp cheddar because I had a Costco sized mixed bag of cheddar/monterey jack. It turned out great. My family requested that it go onto the list of make again meals.

Baked Spaghetti

It wasn't bad but it wasn't good. I wouldn't make it again. It seemed pretty dry so I would definitely suggest adding more sauce.

Chicken Tortilla Soup V

I would have given it 5 stars if I hadn't have added a few things and greatly increased the amount of broth, which seemed to be way off. I took a reviewer's advice and used Embasa salsa but I added 2 cans instead of 1. I also added a can of rinsed black beans and I doubled the amount of chili pepper and tripled the amount of cumin. We like a bit of kick around here. 60oz of chicken broth is what it seemed to take, in my opinion. It's a great recipe to use as a starting off point. You just need to adjust it to your liking. I definitely recommend this soup topped with sour cream. This recipe will definitely be in my recipe rotation from now on. One last note... I cooked and shredded my chicken prior to assembling the soup.

To Die For Blueberry Muffins

Amazing wonderful muffins. I had to double the batter recipe to fill up a regular size muffin tin though... but I'm not complaining. The batter was very thick and took 24 min. to bake. They were gorgeous and delicious! This is my new go-to muffin recipe.

Grilled Salmon I

Made exactly as written (refrigerated for just 2 hrs) and it was wonderful! I did use wild salmon so the marinade tasted subtle on the bold flavorful filet. I imagine on farm raised salmon the marinade flavor may be a bit stronger. It was perfect for us though.

Tortellini Soup

Spaghetti Squash I

I give it 4 stares only because I had to make some mods in order for me to feel like it was a 5 star recipe. I cooked the squash in the microwave to save time. For the veggies I sauteed a red onion, red bell pepper and zucchini together before adding the garlic. Then instead of adding fresh basil at the end I used a can of diced Italian seasoned tomatoes. The olives and Feta at the end are the perfect touch. My family LOVED it! We are going mainly meatless so this dish will definitely be something we eat often. It was that good!

Chicken Pot Pie IX

Made it for dinner tonight, exactly as written. It was very good and my 16yo son said he could eat it everyday. Next time I would season it a bit more though as it was a tad bland. I'll definitely be making this again. Next time I think I will use some of the suggestions from other reviewers and see if like the tweaks to the recipe. The one thing I definitely like about the recipe is that it did not call for canned soup. I find those to taste just like a commercially frozen pot pie. This one certainly had more of a homemade taste to it.
