Creamy Chicken and Wild Rice Soup

We really enjoyed this soup BUT I did add sauteed carrots, celery, onions and mushrooms. We like veggies in our soup. I also subbed one of the cups of heavy cream for skim milk to cut some fat and calories. I reduced the flour to a half cup but I should have used the recommended amount of flour because I would have liked this soup to be a bit thicker. Regardless, this soup served with some fresh warm bread is a meal that can't be beat. I'll definitely be making it again.

Kelly's Slow Cooker Beef, Mushroom, and Barley Soup

UPDATE: after writing my original review my husband and I heated the leftovers up for lunch. It had a very weird almost slimy texture to it. Maybe the barley breaking down a bit too much overnight. Very unpleasant. I'd possibly make this again (with changes) but definitely not save any leftovers. ORIGINAL REVIEW: Made this yesterday and my family thought it was ok. If I make it again I'll add some spices or heavily season the beef and then sear first to add more flavor. I would also add celery. I found the recipe as written to be tasty but a bit bland. I'll make it again with subtle changes and see how it goes. It sure made the kitchen smell great!

Chicken Breasts in a Sour Cream and Wine Sauce

My family enjoyed this recipe. I did make a couple of very small changes. I cooked the bacon in the microwave and added it to the sauce instead of using for garnish, cooked fresh mushrooms to add instead of using canned and omitted the onions and almonds. It felt like a very heavy meal so I wont' make it often but if I needed to finish up a bottle of white wine I'd make it again on a cold night.

Spinach and Tortellini Salad

Pretzel Turtles®

Simply perfect. These are a big hit in my Christmas treat boxes I send to family and friends. As soon as my husband sees the big bag of Rolos come into the kitchen during the holidays he know that I'm getting ready to make these and he can't wait to eat them. You can use any shape of small pretzels and if you have someone who cannot eat nuts then you can always replace the pecans with M&Ms.

My Best Clam Chowder

This is a nice and easy clam chowder recipe. I followed another reviewer's suggestion and cooked six slices of bacon to crumble into the soup and then cooked the vegetables (omitted the carrots) in the bacon grease. I also used a bottle of clam juice instead of water. The red wine vinegar is the key to this recipe, don't skip it.

Awesome Sausage, Apple and Cranberry Stuffing

I have made this as a Thanksgiving side for a while now. My family loves it! I just make a few changes due to ease and what I have on hand. I use an unseasoned stuffing mix instead of making my own, omit the liver and use sage pork sausage instead of the turkey sausage (it makes a huge and delicious difference). This stuffing is the favorite thing on the table during the holidays.

Chili Rellenos Casserole

Not sure if I should rate this five stars only because I did use the recommended changes and did not make this according to the original recipe. With the changes recommended in the "Most Helpful Positive Review" it is an amazing recipe. I paired it with the Spanish rice and my family loved it.

Cajun Chicken Pasta

My husband made this the other night and we were blown away. He made it exactly as written and it was absolutely wonderful. Next time we will try using sour cream instead of the heavy cream for health purposes though. This recipe definitely made it into rotation.

Cajun Crab Soup

Great soup base but not quite right for me and my family. I used a high end can of lump crab meat and canned crab seems too crabby/fishy tasting for this recipe in my opinion. A pound seemed like way too much. Fresh mild tasting crab would have been ideal but I wouldn't pay for fresh crab for this recipe. Next time I think I'll use this soup base (minus the green onions again) and add some potatoes and chopped clams instead of the crab. I'll give this one a few more tries with some changes and maybe a different brand of crab meat and see what happens.

My Chili

Nice chili recipe. I made a few adjustments to suit our taste. Subbed 2 cans of Rotel tomatoes with green chilies for 2 cans of the stewed tomatoes, added an extra can of kidney beans, added an additional tablespoon of chili powder and also decided to throw in a 1 1/2 teaspoons of cumin because I LOVE cumin. Really good!

Slow Cooked Corned Beef for Sandwiches

The best recipe I've tried for corned beef. The beer gives it a great added flavor. I used the meat for sandwiches and everyone loved it. This is now my go-to recipe for cooking corned beef.

Chocolate Cream Pie II

Outstanding! I read a lot of the reviews and took the following advice... 4 egg yolks, 4 tablespoons of corn starch and replaced 1/4 C of the milk (I used 2C half-n-half and 3/4 C of 2% milk) with Baileys Irish Cream. The pie set up perfectly. I used an Oreo crust and made my own whipped cream. Taking the 10 minutes to do it is absolutely worth it. This was by far the most decadent, rich and amazing chocolate pie I have ever had. A small slice goes a long way!

Cajun Chicken Pasta

We loved this. The only thing I would do differently next time is to cook the peppers, mushrooms (used baby bellas) and onions at the same time the chicken goes into the pan because I prefer a softer texture to them. I did add some extra Cajun seasoning due to the other reviews but not enough to really say I made huge spice changes to the recipe. Also, I think the key to any good pasta recipe is buying the best pasta you can and not the box stuff from the grocery store. I'll be making this again.

Stuffed Green Peppers I

We love this recipe and make it at least once a month. The only changes I make now is to use the rice cooker for the rice because I'm notorious for under cooking the rice, which is no fault of the recipe. Other than that I made it just as written. The other change is that I use three large green peppers instead of six since there are only three of us. Makes an entire meal!
