Lemon Cake

Made this for mother's day. Used Lemon Cake Mix but otherwise made as written. Well, almost. I prepared a Lemon Curd as a filling, however will chill next time before placing top layer. The pudding cake is so dense and moist that it squished out all of the lemon curd so it was a bit more like a sauce than a filling, but it was really delicious! Will make this again!!

Blueberry Pie

Best pie I've ever tasted, much less made myself. I almost followed the recipe. HA! Definitely was a good base recipe for sure. I increased the cornstarch to 6T, added 4 peeled & diced fresh peaches, increased the sugar to 1 1/2 cups and threw in about 1 T lemon juice. Used a refrigerated pie crust top & bottom. Baked at 400 for 10 minutes then decreased to 375 for 50 minutes. Put foil around the edges and removed for the last 15 minutes. Came out perfect. SO YUMMY!

These are so good! I add a little extra cinnamon because my family likes them really spicy. Best oatmeal raisin recipe ever - I'd like to try with cranberries, I bet it's amazing!!!

Tomato-Cream Sauce for Pasta

This is my "go to" for potlucks or big parties. Easy, quick, cheap. I serve over rigatoni and usually double the recipe and use 2 lbs of pasta. I use my immersion blender to make the sauce smooth and creamy. I also add parm after blending. Once I added mushrooms after blending the sauce and it added a nice texture and flavor, but the original recipe is fantastic too. Always a big hit, served with caser salad and garlic bread. YUM!

Marinated Pork Medallions with a Ginger-Apple Compote

This was really good. I used a pork loin (not tenderloin), so it was bigger and took a little longer on the grill. Halved the marinade, because it did seem like a lot - it was plenty for our 4 lb roast. Sliced it after grilling and it was YUMMY! The compote was delicious - I don't care for ginger, so I'll probably skip it next time - but we'll make this again for sure!!!

Pasta Pomodoro

We loved this - somehow it was both light AND hearty! Really hit the spot. Doubled the tomatoes and garlic, kept everything else the same. Served it with homemade pizza and a salad. YUM!

Vanilla Cherry Ice Cream

This hasn't even finished freezing yet and I love it! Super yummy- tasted it right out of the ice cream maker. Doubled the recipe, cut the almond extract in half, used frozen pitted cherries from Costco - HEAVEN!

These were SOOOOOOOOO good! Made them to have for Sunday breakfast with yogurt & fruit - perfect! Only modification was I doubled the cinnamon. YUM!

Pasta Shells with Portobello Mushrooms and Asparagus in Boursin Sauce

This was pretty good. Seemed to be missing something though. I used the garlic & herb Boursin and also added some cream cheese to try and make it a bit creamier. I'll try it again for sure but probably doctor it up a little.

Sooooooooo good! Made this today for our New Year's meal and served with cornbread. Only modification is that I used a little more water, used diced ham instead of the hock and added 1/2 head of cabbage. I almost forgot to add the smoked cheddar and then as I was serving remembered and shredded some over the top really quickly - wow, what a difference! We'll definitely have this again for next New Year!

Boilermaker Tailgate Chili

This was quite different from my "regular" chili, but the family loved it. I'm not a fan of sausage, so I was hesitant to make this but was pleasantly surprised when I couldn't taste the "sausagy" taste that I dislike. I took leftovers to work the next day and they were gobbled up quickly! I served with Fritos, cheddar cheese and sour cream as toppings. Will make again and agai I'm sure!

Taqueria Style Tacos - Carne Asada

We loved this! The marinade was perfect - much better than the pre-marinated stuff you get at the grocery store. With warm corn tortillas and all the fixens' - really hit the spot. I made it exactly as written, but added a little sliced avocado to top each taco off. YUM!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

This was delicious! We loved it and will make it regularly. The glaze was perfect and charred nicely on the grill. We served with "creamy potatoes au gratin" and asparagus sauteed in butter and garlic and a fresh fruit salad. YUM!

This was great - I made this recipe (minus green bell pepper) and then a couple others that were more unique -one had steak and chicken, and another was roasted veggies. But the original recipe was the BEST! Everyone loved it, so tasty!
