Crab and Swiss Quiche
I made this a year ago and found it a bit bland. I embellished the recipe today to rave reviews all around the table. Instead of 1-1/2 cups swiss cheese, I used 1 cup shredded swiss cheese, and 1/2 cup shaved parmesan cheese. I added green onion, a splash of Worcestershire sauce, and some fresh ground pepper. Finally, I used a single can of real crab meat and approximately 15 medium size cooked, deveined shrimp (tail off). I cooked it at 350 degrees, but found that 40 minutes was not long enough. An extra 15 minutes gave a perfect result.

Caramel French Toast
I followed the recipe a week ago to test it before serving it to friends. We liked it, but it needed a few small changes for New Years Day brunch. The first time round there wasn't enough wet ingredients for the top layer of bread, which ended up dry and crunchy. For my guests I added two additional eggs, sprinkled a little nutmeg between the layers of bread, and some on top too. Most importantly, I dipped the bread in the egg mixture before adding it to the casserole dish, to be sure the top layer was not dried out. It came out perfect - moist, tasty, and beautiful. Our guests raved about the food, and everyone went for seconds - the most sincere food compliment I know.

Apple Cider Sauce and Pork Loin Chops
Very tasty pork dish. I wish I had followed the advice of other reviewers, and reduced the cooking time. Even though it was a little dry, it got rave reviews around the table, and has already been requested again. Only issue I had is that the sauce didn't thicken after about 15 minutes of active boiling. None the less, delicious!
