Addictive Sweet Potato Burritos

I used the recipe almost exactly, except I replaced the kidney beans with refried black beans. I served it with Greek yogurt instead of sour cream, Trader Joe's hot chipotle salsa and roasted cauliflower. SO delicious! This will definitely become a go-to recipe for me.

Creamy Onion Gravy

I modified this recipe to use for an impromptu dinner. I used olive oil instead of vegetable oil, and not having any buttermilk on hand I mixed 1/4 cup plain yogurt with 1/2 cup soy milk. In addition to salt and pepper, I added garlic salt and paprika. Delicious!

Pumpkin Cheesecake in a Gingersnap Crust

This recipe is amazing. I made it for a departmental party and it was the most popular dish that night. I modified the recipe slightly, eliminating the hazelnuts from the crust and substituting the heavy cream with sour cream. The cake turned out delicious!
