Slow Cooker Cilantro Lime Chicken

This was SO GOOD!!! I followed the ingredients and amounts exactly plus added a can of drained Mexi corn shortly before serving (just to heat the corn through). I threw this together over lunch and put it on low for about six hours - it was PERFECT when I got home from work! The chicken just fell apart and shredded perfectly. I served this with a Cilantro Lime Rice recipe I found on here - when I make this again I'll probably serve with just regular rice (the Cilantro Lime Rice was delicious but maybe too much lime and cilantro between that and the chicken) or even in tortillas/tacos. Regardless, this will definitely be a regular for me. It was almost better as leftovers too! Overall just a great recipe - very few ingredients (cheap!), little prep time (easy!), and DELICIOUS!!!

Mouth-Watering Stuffed Mushrooms

These were really great!!! To cut down on calories I used fat free cream cheese instead of regular. An 8-oz package of fat free is only 240 calories while regular is 800 calories, and you'd never be able to tell the difference in this recipe! Other than that I made it exactly as stated and sprinkled some seasoned bread crumbs on top right before baking. A few commenters suggested making these in a cupcake/muffin pan which is what I did, and it made baking/handling them much easier. I've already recommended this to friends and can't wait to make it again!

Spaghetti Squash I

I love all the ingredients in this recipe, so I was really excited to try it. But what a let down it turned out to be! I can't even put my finger on it...something just isn't right here. I even made it a second time to see if I just messed something up the first time. Nope - exact same result. It tastes bland yet overwhelming at the same time. I don't even know how to explain it. Very strange. I gave it a shot (actually TWO shots), but now I think I'm crossing this one off my list for good!

Taco Soup II

The first time I made this it just seemed like chili. I made quite a few changes the second time around bases on some reviews from here and my own ideas. I omitted the kidney and lima beans and used black beans and corn instead. I also added one fresh chopped jalapeno and 3/4 of a can of Rotel diced tomatoes with green chiles in addition to the 4-oz can of green chiles. Lastly I added 3/4 of a block of Velveeta (pre-softened/melted in the microwave). The Velveeta made it a lot creamier and DELICIOUS! I actually forgot to add the salt, but I'm glad I did as the taco seasoning and Velveeta was salty enough. Topped with sour cream, colby jack cheese (optional - may be too cheesy for some), and Fritos...AMAZING!!!
