Taco Salad I

Just created this to take to an Easter pot luck today! I had a little too much for the big bowl, so I through some together for the hubs and he is devouring it now. He loves it... I waited to add the meat/beans mixture until making his plate, then added salsa and sour cream to it once it was on the plate. He loved it!

Kielbasa and Cabbage II

Good recipe! I didn't change it at all - just changed the S&P amounts - but I usually "eyeball" these things - Take Note of your Cajun Seasoning (Slap Yo mama or Tony C's) if it already has salt in it - you don't need to add any add'l salt at all - You could add potatoes and or a small chopped sour apple - Thanks for sharing!

Pork Chop and Cabbage Casserole

I created this using Progresso Light Creamy Potato Bacon Soup and I added a little extra water - I feel like the light soup kept this dish on the lighter size although we're talking pork chops here ;o) LOL - I also used Slap Your MaMa Cajun seasoning spice on the chops and over the cabbage Mixture - well - because we like a kick! Great recipe!

Homemade Sloppy Joes

This is a delicious homemade recipe for an All-American favorite... I didn't really measure (shame on me...) but used each of the ingredients here, including the cayenne. It came out like a sweet hot mixture and we loved it. Lots of sugar between the ketchup and brown sugar, however. I only added water the first time cooked it down real good and then while that was cooking down, I made my sloppy mix and kept taste testing for a good 45mins, adding this and that. Mixed it into the meat in the skillet and let it all cook down more, for 30mins. Very yummy with the cayenne... We like a good kick to our dishes. :o)

Ziti with Italian Sausage

This is a fantastic recipe! It's the first time I've used tomato sauce instead of a jar of spaghetti sauce. I followed other suggestions and used a 28oz jar of tomato sauce and a 15 oz of fire-roasted diced tomatoes. I added way more garlic than it called for and used herbs de provence instead of oregano, because that's what I had. The house smelled DIVINE! Great for a pot luck or make ahead and bake later kinda thing. Thanks for the fabulous recipe!

Cha Cha's White Chicken Chili

Fabulous! This is the BEST "white chili" recipe that I know of. It can be pretty spicy so add your jalapenos at the end of you wish, and cut down the Cayenne, if you so please. We like it hot! It clears the sinuses and cures what ails ya. Never-ever-ever cut down on the cumin. It's what gives it the smokey chili flavor. Thanks for the recipe! I have been following this one for years!

Chunky Bacon and Potato Soup

Bacon bacon bacon! Who doesn't love bacon? The more the merrier. This soup is quite yummy. I think fresh parsley would be fabulous, and that is the only change I would make. Yes, I added more bacon than the recipe calls for. I also added less liquids than it calls for. I did add the 4 cups milk, but 14 ounces less of the chicken broth. I also doubled this so my honey could have some lunches for the week. He is in heaven. He loves it! It's cold and snowy out this evening, so it is keeping us warm! Thanks for sharing the recipe. :o)

Slow Cooker Chicken Taco Soup

Wow! This soup is SO GOOD! I actually made my on the stovetop, after cooking the chicken breasts in a pan with some no stick spray. But followed all the ingredients and it is fantastic! We are getting colds, and this is perfect with the "heat" from the chiles. Thank you for sharing!

Stuffed Pork Chops with Gorgonzola and Apple

This is sooooo fantastic! My chops were a little dry, but next time they will be perfect. Dan LOVED them, and couldn't get enough of the sauce, which I make with white wine instead of chicken stock. Gorgonzola has a very very strong flavor so you might try a couple two (3..4) drips of honey along the way.

Brussel Sprouts with Chicken/Apple Sausage over Egg Noodles

FABULOUS! Loved adding the German mustard I had and garlic. I had the sherry as well, so it came out GREAT. I was surprised Dan liked it... no potatoes? No pasta? I did make a little garlic bread though and this was a big hit with him! Will definitely make this to your modifications again!

***** This recipe is real simple and easy to make, and it's delicious. You can replace the broccoli with asparagus, and make a Hollandaise sauce to drizzle over the top each serving. Two words: Yum. E.

Chicken Enchiladas II

This recipe is great! You can sure add your own add'l seasonings, or mix up the creamed soups, etc... I used 98% FF cream of Mushroom, and a can of Golden Mushroom. (I doubled the sauce ingredients and probably used two cups of chicken and highly recommend you do too). I bumped up the recipe to 8 servings, instead of 6. This is a comfort food kind of dish.

Great Pumpkin Dessert

I'm not sure how this will turn out... I'm asking myself as I write this, "why didn't you read MORE reviews?" I did make more melted butter than it calls for, so hopefully it will be OK. I love trying new things, but EESH! I feel bad for the girl who said her's burned and only a 1/3 of it was presentable. That stinks... I'm making this to share with my neighbors, and let them know there's a prowler/thief in the neighborhood. Baked goods as a gift will surely make the news easier to swallow. :) Update: Eleven mins and it is done... I checked it.. half was more dark on top than the other, not too bad, though, so I rotated it. It really smells devine. Yaay!
