All Day Apple Butter

Reviewed: Jun. 11, 2011
Living in New Zealand, I miss and crave apple butter. And this recipe was so easy and so simple. And tasted so delicious. I did have to use a whisk to get the apple bits broken down a bit, so think I will chop them finer next time. Disappeared rather quickly after telling my friends about apple butter and letting them taste it, so next time will make a batch just for myself!

Amazing. I always double the recipe as doesn't make nearly enough - they barely last a day in my household.

Scones

Reviewed: Dec. 2, 2009
Great scone recipe - first scones I made myself. I do agree with the other comments about adding the milk and egg in another bowl then gradually adding it in until it is just wet enough. Made the recipe not as easy as it looked because it was up to your own personal judgement - but they tasted great and were gone within a day!

Chocolate Peanut Butter Squares

Reviewed: Oct. 29, 2009
DELICIOUS! I followed early recommendations in terms of butter and chocolate chip ratio for topping, and more graham cracker crumbs. They are sweet but not excessively so - I have had to freeze over half of the recipe so I don't eat them in less than a week - very moreish. Living in New Zealand, we can't buy reeses peanut butter cups, so I am SO glad I have found this to satisfy my cravings.

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 21, 2009
Best recipe ever. I made two batches of cookies - one choc chip and one of these. I thought my flatmates would have gobbled up the chocolate chip ones, but these went first. So chewy, sweet, delicious and soft. Very more-ish!

Absolutely Best Brownies

Reviewed: Jun. 17, 2009
Great recipe - I have my usual favorite brownie recipe which involves about 7 eggs and a LOT of chocolate, but we had no normal flour so I googled 'self rising flour brownie recipe' and found this. SO easy to make, took less than 5 minutes. I improvised by adding in chocolate chips, which made them more gooey, and doubled the recipe. Will probably quadruple it next time - my 3 male flatmates ate them all in less than 24 hours!

Best Ever Banana Bread

Reviewed: Mar. 23, 2009
I love this recipe. Although it is not extremely banana tasting, it is very 'moreish' where you just cant stop eating it. I did substitute the white sugar for 3/4 cup white and 1/2 cup packed brown sugar. Added in some cinnamon and vanilla for a bit of flavor. It is definitely my favorite banana bread recipe, and I love that it doesn't call for butter, which is so expensive (for a poor student like myself!) so it becomes very economical!
