Green Pozole

Great soup. Could not find pasilla chile so substituted with another mild dried chile.Other than that followed recipe exactly. Had bowls of shredded cabbage, cheese, sliced radishes, tortilla strips, sliced avocado, and onion. People just helped themselves to the toppings. Thanks so much

Blueberry Vodka Martinis

The best blueberry vodka. I mix it with lemonade and is so refreshing. I can't wait for bleberries to come in season again. Also try other berries. Just follow the directions but try raspberry for a wonderful flavored vodka. Much better then the flavored vodkas you buy in the store

Limoncello

This is a simpler version of my recipe. My limoncello ages for 80 days but is well worth it. The more it sits the smoother it is. Donot skip on the aging and make sure to keep it in the freezer. Wonderful

Slow Cooker Chicken Taco Soup

Loved this soup. It had just enpugh spice. The people who wanted more used hot sauce. The Bill Echol's taco seasoning and using a mild beer is a must. I also set bowls of cheese, tortilla chips, sour cream, and chopped avocado out for people's own preference. Great recipe

Shrimp, Leek and Spinach Risotto

This is a great starter recipe for risotto. I did change it by adding a extra 1 tsp. of garlic and using chicken stock instead of vegetable stock. It does make enough for 6 people with a salad and crusty bread. You do need to double on the liquid though. That is the only reason I'm not giving it 5 stars. Also you can substitute red pepper flakes for the fresh hot pepper. I started with a 1/2 tsp. but would maybe add a whole tsp. next time. My family likes more spice. Still a great idea

Fabulous Zucchini Grinders

LOVE IT!! LOVE IT!! I have made this twice now. Just a wonderful basic recipe. I used sliced portabella mushrooms and onions in mine to give it a meater flavor. For the die hard carnivore use a jar of meat spaghetti sauce. But no one missed not having the meat both time I made it. Thanks again for a great recipe
