Easiest Oven Baked Chicken

Great base for making crispy oven-baked chicken. I used thighs & legs with the skin on, and added salt, pepper, garlic powder & grated Parmesan cheese to the cracker crumbs. I did half saltines & half Ritz crackers. I like this because, while I never have breadcrumbs on hand, I always have crackers! Will make again.

Butterscotch Bread Pudding

This. Was. So. Good. Very sweet, I may cut some sugar out next time. I added raisins soaked in rum and a simple rum sauce. This is my go-to bread pudding recipe from now on.

Tasty Lentil Tacos

Great recipe if you love Mexican food like me, but are trying to cut some fat out of your diet! I was looking for a recipe that used lentils because they are good for you, and realized that I could make an entire fat-free or low-fat meal out of this! Only problem (probably my fault), my liquid dried up in only 15 minutes, leaving the lentils al dente, but I added more broth and kept cooking. Next time will simmer on super-low heat. Thanks!

Chocolate Chip Banana Bread II

Delicious & very moist banana bread! I subbed butterscotch chips for chocolate and added nutmeg & vanilla and coated the pan in butter, sugar & cinnamon. I also had to lower the oven temp halfway through cooking to 325 or the top would have burned. Would make again.

Seven Layer Taco Dip

Made this for Super Bowl-it's really, really good! The cream cheese is the key ingredient for sure. I used seasoned ground beef on the bottom layer and omitted the peppers & lettuce. Will definatley make again!

Best Big, Fat, Chewy Chocolate Chip Cookie

I love this cookie recipe and will definatley use again! The only change I made was to make the cookies slightly smaller to increase yield and reduced cook time to 12 minutes, could probably try 11 minutes next time. I formed the dought into balls on the cookie sheet and they came out nice and fat, not flat at all!! Very rich with a crisp outside and soft chewy inside and pretty to look at too!

So good!!! This would be great for holiday breakfasts when there are lots of mouths to feed but you don't want to spend all morning cooking, just throw this in the oven and that's it.

Greek Chicken

I LOVE this recipe!! I've made it several times and it's always so yummy-I serve it with pita bread or flat bread, hummus and tzatziki. I also prepare the chicken the night BEFORE I cook it, so it marinates a full day. I turn it and re-coate the chicken once or twice during this time also. I find the chicken really soaks up the marinade that way, and it comes out very tender. I use double the lemon juice, (1/2 cup). I also find this recipe tastes better on skin-on, dark meat chicken, but that's probably because it's fattier! Lastly, I do bake this ( I don't have a BBQ), 350 degrees for one hour. Ladies, if you want to impress a new guy, this is what to cook-you can't screw it up, it takes hardly any time, and he will love it!!

Marmalade Pork Chops

No stars! Meat was overdone, sauce turned to water and there was too much of it...no flavor, either. I read a lot of reviews about this recipe before I made it, I am surprised by all of the positive reviews! Don't say I didn't warn you!
