Classic Greek Spinach

I loved it, but made a few changes. I made it like this: (1) Saute onion in 1-2 tbsp olive oil then add garlic for another 1-2min (2) add spinach and tomatoes for 5 min (3) start brown rice in another pot: bring 1 cup rice to boil w/ 1 cup chicken broth + 1 cup water, then simmer (3) add 2 cups chicken broth with salt, pepper, and tomato paste - boil, then simmer for 15min (4) add rice and remaining liquid, boil, then simmer until rice is done, (5) add 1 tbsp lemon juice at the end. I let it sit for a while on low heat, then stove off, before we ate, which soaked up more liquid - Loved it!

Tomato Barley Soup

Yum! I took suggestions from reviewers and made my own changes as well: 1 onion, 1 1/2 large carrots, 3 garlic cloves, subs olive oil for vegetable oil, no celery, 3cps chicken broth (no water), 3/4 cp barley, added zucchini and 1tbsp tomato paste and added about 1/2 bunch spinach at the end.

Beaker's Vegetable Barley Soup

YUM! Great recipe! I made some small changes: 1 quart veggie broth; 1/2cp barley; no celery; curry w/ 1/2tsp each cumin, turmeric, garam masala; not much pepper. Only needed to cook for 1hr

Marrakesh Vegetable Curry

Delicious recipe! Made a few small modifications: about half the peppers; cut down the oil; increased spices a bit (omitted cayenne); 1/2cp orange juice + 1/2cp carrot juice; added some ginger (in addition to ginger in my curry). also didn't have blanched almonds so just chopped up some regular almonds I had on hand.

Vegetable Tagine

good recipe and, yes, makes a lot! I made the following changes: Added 2 chicken breasts cut up(cooked first w/ the onions and garlic); upped the spices to 1/2tsp each and added ginger and paprika (prob. needed more of all spices); no eggplant or green pepper; 2 zucchinis; can tomatoes; some leftover butternut squash with the sweet potatoes; served with quinoa.

Spicy Chicken and Sweet Potato Stew

Yum! I used 5 cloves garlic; red pepper instead of orange; only 1 tsp chili powder, no red pepper flakes; added a large carrot diced; and let the veggies cook a bit longer. Otherwise followed recipe. Could use more spice but overall very tasty! served over brown rice.

Italian Vegetable Soup with Beans, Spinach & Pesto

Loved it! Made some changes based on reviews and what I had: - took out celery and peppers and peas - added garlic w/the garlic and leeks with the other veggies - used one can cannellini beans and one can butter beans - added dried oregano, basil, parsley YUM!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Great recipe! Only changes I made were to use about 2tbsp olive oil instead of butter and didn't puree it. Nice and sweet - lovely recipe! and a nice change from the classic lentil soup, which I also love

Spaghetti Squash I

Yum! Once I got the squash opened (very HARD!) this was delicious. I made the following small changes: * baked squash side up w/ olive oil, salt, pepper * only used 1/2 the squash * used olive oil for onions, garlic, tomato Will definitely make again!

Veggie Vegetarian Chili

Delicious! Personally, I don't like mushrooms, so we took those out. Other than that, we followed the recipe exactly and it was fabuulous! Made for some good Superbowl food (pretty sure the food was more popular than the game!)

Vegetarian Moussaka

We loved this! Similar to other recommendations, I made these changes: - I used dried lentils: soaked with some water overnight and cooked in water. - I roasted the eggplant and zucchini in the oven (w/ olive oil) and sauted the potatoes on the stove - To cut the fat, I used 1% milk and a little less butter. I also used reduced fat feta. - I didn't have nutmeg, so I used garam masala (indian blend of spices). I accidentally threw in too much cinnamon, which was delicious! Definitely will make again! Next time, I'll use less liquid from lentils and maybe keep some of the tomato juice from the canned tomatoes.
