Excellent! Thank you for an amazing recipe. Followed as directed except I also added 1/4 cup shredded coconut. Lovely and moist. Delicious!

Carrot Cake III

Simply awesome. Replaced some of the oil with apple sauce and pineapple juice. Husband loved it, ate almost the entire cake just by himself!

Spinach Lentil Soup

Really enjoyed this healthy soup. Used a good quality balsamic vinegar, added some potatoes and a chopped zucchini for extra veg. Even my husband, who usually isn't keen on 'healthy' loved this soup and went back for seconds.

Quick and Easy Cheese Bread

I changed the recipe a tad, added 1 cup of milk and 1 1/2 cups of strong cheddar cheese. Bread was crumbly and lacked flavour. Will not be making again.

Cilantro-Lime Dressing

Excellent dressing. I used a little less honey than required, other than that followed the directions exactly. Served with grilled shrimp, cous cous and a leafy salad. Was a huge hit with my husband.
