Taco Seasoning I

Very good! Has a bit of a kick (I don't like much heat) so may reduce the crushed red pepper slightly next time for me and the kids.

Salmon Chowder

DELISH! Made as is except I added hardly any cheese (none would taste good too) and used fresh salmon. Dip some french bread in the soup and drink a glass of wine, and you have perfection!

Mom's Zucchini Bread

I replaced half of the the flour with whole wheat, used applesauce instead of oil, and used 3/4 honey instead of 1 cup of sugar. It turned out well and was much healthier than the original version.

Chicken Breasts with Balsamic Vinegar and Garlic

The only things I would change would be to pound the chicken to get it to a uniform thickness. I would also double the mushrooms/sauce, because it was SOOO good. Will make again. I didn't have a bay leaf or the thyme and it was still divine!

Oatmeal Blueberry Muffins

Very good! I made with 1/2 whole wheat four...next time I will try all whole wheat. They are not super sweet, but they are wonderful, and if you use fresh sweet blueberries these muffins don't need any more sugar! Love that these can be modified and made very healthy!

Easy Peach Crisp II

I used fresh peaches (left the skin on) and sprinkled them lightly with sugar. I then added the topping but only used 1 1/2 cups of flour and added 1/2 cup oatmeal...it was fantastic!

Whole Wheat Banana Nut Bread

YUM!!I used applesauce instead of oil, added some extra mashed bananas (maybe 1/4 - 1/2 cup extra), added a light sprinkle of cinnamon sugar on top, and made as muffins. I baked them for about 20 minutes

Carrot Cake III

Not sure what went wrong...I bake a lot and have never had anything turn out so bad. It was really oily and had no good flavor at all...I tried making cupcakes so maybe that contributed, but I would never make this again.

Slow Cooker Texas Pulled Pork

Made exactly as written. I used Sweet Baby Ray's BBQ sauce and for me the key to these sandwiches is a little extra BBQ sauce piled on top. It was a hit at the party I threw...no leftovers!

THE BEST EVER!!!!!!!!!!!!!!!!!!!!!!!!!!! I even make them with half whole wheat flour sometimes and they still taste wonderful! I also make some quick blueberry syrup for topping...MMMMMMM

Gourmet Sweet Potato Classic

I used YAMS - they are not the same as sweet potatoes (a lot of people don't know that). I haven't even baked this yet, but I took a bite of the filling and it was already DELISH!!!! I also tried a bit of the topping and it was great too! Cannot wait for this to come out of the oven!

Blueberry Muffins II

These were okay. 30 minutes is too long to bake (at least mine were a little overcooked). Also, next time I will leave the blueberries whole, because the batter turned blue-purple and it was not visually appealing at all (NOTHING like the picture). Made exactly as-is and probably will look for a new recipe.

Kabob Marinade

We had a frozen cut of beef that was on the tough side...this marinade turned it into FANTASTIC, melt in your mouth steak on out kabobs. I only had time to marinate it for 2 1/2 hours...I can only imagine it would be even better if I had more time to marinate it! Will use again. Easy, great flavor, tough steak turned to gold!

Shrimp Lemon Pepper Linguini

This didn't thrill me. Whenever I see such high ratings I have very high expectations. My husband thought it was too lemon-y and I felt that it was a little bland, so I guess it's all a matter of personal taste. You definitely need to double the sauce though!

Perhaps my expectations were set too high with such rave reviews. I think these are good, but not incredible. I made exactly as the recipe calls for...the cookies are a little on the greasy side. May make again, but I have other cookie recipes I prefer.

Marinated Tuna Steak

Good. We didn't think it was great, but we followed s few suggestions (adding a little honey to the marinade) and had to use dry parsley and oregano since that was all I had on hand. Maybe if I had followed it exactly we would have had better results. Probably won't make again though.
