My favorite things to cook
Different kinds of enchiladas - I make mine extra cheesy. Desserts. Casseroles. Mexican food. I've been experimenting with Caribbean food since I got back from my cruise. I learned how good cooking with rum can be!
My favorite family cooking traditions
My mom's Chili with peas is the bomb! It doesn't sound like it but it is. My sister, Chris, is the real family cook. She makes these bacon/tomato cups that are out of this world! I bring them to every occasion.
My cooking triumphs
Shredded beef enchiladas - I cooked a whole chuck roast for hours, nice and tender, and broke it up with montery jack cheese, green chilis, some other stuff. It turned out nice. And my guacamole, of course - it's my most requested recipe. I swear we could live off of guacamole and nacho chips!
My cooking tragedies
I tried to make these orange flavored cookies once... ooh, I'd be better off with sawdust. YUCK.

Beet Bundt Cake
I heard about Beet Bundt Cake from a Polish friend. This is the first recipe for it that I've found and just had to try it. It was delicious and not at all what I expected. I am not a fan of beets and you cannot taste the beets at all. It tastes like a rich, chocolate cake. I took the suggestions of other reviewers and used canned, sliced beets that I mashed and drizzled a cream cheese frosting thinned with milk on the top. My whole family loved it and devoured it almost in one sitting! Thanks for posting!

Zucchini Pineapple Bread I
This was VERY moist and flavorful! I just tried it as a way to use some zucchini from the garden and because I had a can of crushed pineapple on hand. Now it's my favorite zucchini loaf recipe. It was a big hit at work.
