Garlic Chicken

I have to give this a 5 because my 6 year old cleared her plate! She's not exactly picky but kind of hard to impress. My 8 month old loved it too! I followed the recipe to a t and served it with pasta. FANTASTIC! Thank you so much sharing.

Pressed Smoked Salmon Mousse Appetizer

I thought they were wonderful. However, I made them for a party and nobody touched them. Maybe if you take them to a baby or bridal shower as opposed to a cook out, they would be more well received. :( Lesson learned....know your audience!

Tomato Chicken Parmesan

I modified by mixing a half jar of Alfredo with a half jar of regular spaghetti sauce to make pink sauce. I layered 1/4 of the sauce on bottom of dish, then a half package of al dente spaghetti noodles, then 1/2 cup shredded cheese. I put the cooked chicken on top, spooned the rest of the sauce and sprinkled with a cup of shredded mozzarella. From there, baked as directed. My 6 yr old LOVED it and I thought it was great too.

Pesto Chicken Florentine

Wonderful! I was so pleasantly surprised. I added sundries tomatoes. Everything else was as is. This recipe was kid friendly (8 months, 6 yrs and 14!!!).

Hilarious how such a simple dish could be such a hit with the family! When I read the reviews I thought it was strange that people were commenting on how much their diners enjoyed it. Sure enough, my husband and five-year old BOTH were going crazy over it and requested that it become a regular dinner! I used Turkey Italian Style (sweet) sausage and red potatoes. I did add garlic powder, salt and pepper and used some chicken stock. I gave them shredded cheese to add as they wanted. I also threw some in a frying pan, the next morning, with a fried egg and it was fabulous!

Tomato Cucumber Salad with Mint

I really love this recipe!! I substituted splenda for sugar to keep it low cal. The key is definitely putting the fresh mint in last, right before you serve. It was FANTASTIC!

Italian Chicken with Pesto Potatoes

The chicken recipe is fantastic!!! we didn't love the potatoes but live and learn. The suggestions to add prosciutto and portabellos was excellent. I followed the Balsamic Vinegar suggestions too. Thank you for sharing!
