Featherlight Scones

I really liked this recipe alot! I've never had scones before so I don't know what they are supposed to taste like, but I expected them to be sweeter, but these were still really good, almost like a light fluffy biscuit! I think that these would be wonderful paired with a glaze and dipped like cinnamon sticks, which is how I will serve them for breakfast, but they would also be really good brushed with butter instead of milk, and sprinkled with some parmasean cheese instead of sugar. All in all these are really good. To make them more fun for the kids, I used cookie cutters dipped in flour instead of cutting them into triangles, the butterflies and stars were fun shapes for the kids, and they baked up just fine.

Pumpkin Cake III

I made this in muffin pans (it made 24 regular sized muffins). I also ommited the chocolate chips and nuts as my sister has braces. I gave it 4 stars because the muffins weren't as flavorful as I had hoped, but still pretty good. The next time I make them I will try adding 1/2 cup of sugar and increase the cinnamon to 2-3 tsp. With those minor adjustments I think this would easily be a 5 star recipe! These were really simple to make. If you use muffin pans instead it will take longer to bake than most muffin recipes, but I forgot to watch the time so just watch them closely.

These are GREAT! They didn't have enough of a lemon flavor though, but I think adding a bit of extra lemon juice might help that. Aside from that these are so awesome!

Jewish Coffee Cake

This cake is AWESOME! I put all the batter into a 9x13" pan, and then sprinkled with 1/2 of nut mix. Then I made a 2nd batch of batter, and spread over the top. To the remaining nut mixture I added 1 Tbs cinnamon, 1 Tbs powdered sugar, and 1 Tbs brown sugar, and covered the top of batter with it. I also increased melted butter to 4 Tbs. , and drizzeld generously all over the top of the cake before baking. I found that an hour was a little long, so it should be checked at abot 35-45 minutes. This bakes up very thick, and is soooo good!

Mulberry Rhubarb Pie

This pie is really good. I'm not entirely fond of mulberries, but still really enjoyed the pie. I think raspberries would also work well with this recipe! Thanks so much for sharing Bev T.
