Rich and Creamy Beef Stroganoff

Husband challenged me to make beef stroganoff, found this recipe and tried it! Loved it! After browning the meat, I put the meat and juice in the bowl and later incorporated it back in. Used dijon mustard for yellow, and finely chopped most of the mushrooms since my 5 year old won't eat the slices! Made this twice and thinking next time might try it in the crock pot. Thank you for this delicious recipe!

Roasted Butternut Squash Soup

Made this tonight and the husband and I loved it! The kids were on the fence, but ate some. I did not add the half-half, but served sour cream on the side which we loved in addition to the soup without (try both, very delicious but different!) Could not find pumpkin seeds but did offer the toasted planko. Added celery salt, coriander seed (not toasted) and baked the Acorn squash (no butternut available when I got to store.) Used small-medium onion, 5 carrots or so, medium squash and 2 cinnamon sticks and low salt chicken broth. Recommend! YUM!

Quinoa with Veggies

Family really like this! The 5 year old said it wasn't his favorite but he still ate it while the 3 year old had two helpings of it! Made it a side with some chicken thighs and added corn, peas and carrots to it. Cooked the quinoa in chicken broth (2 cups.) The possibilities are endless with this recipe and looking forward to trying other varieties! Thanks!

Shredded Chicken Tacos

This was delicious! My local grocery store does not carry Goya products, so I used what I had and since I could not find an Adobo seasoning product I used the one on this site and made my own. Husband raved about these and the 3 and 5 year picky boys I have ate them with no questions or complaints! WINNER!

Hasselback Potatoes

These were delicious. I kept the skin on. Baked them for the first 40 minutes cut-side down and then turned them cut-side up for another 25 minutes. Second time I used a spoon to separate the cut potato before adding the cheese and breadcrumbs. They are yummy, soft cooked potato in the inside while being crunchy on the outside. The topping adds to the flavor while not overpowering the potato taste! These were a hit for hubby, a 2 and 4 year old and me! Recommend these to anyone who likes potatoes (or doesn't), doesn't have time to make baked potatoes, or just wants to try something new and different!

Blueberry Chicken

It was good: hubby really liked it, kids not too crazy for it, I thought it was okay not the best thing, but certainly not the worst. Thinking we will probably not make it again. Worth the try though, and not difficult to make! The orange marmalade was a predominant flavor though, present in every bite. We used fresh blueberries, too.

Roasted Italian Herb Chicken

Made this with 2 boneless chicken breasts cut into strips and marinated with dressing for 30 minutes or so. Then shook in bread crumbs, back in dressing, back in crumbs into pan(no extra dressing in pan.) Topped with little pats of butter and sprinkle of paremasan cheese and baked. Had foil on for first 20 minutes and then cooked uncovered. Delicious! Kids (4 & 2) weren't too happy with it, but hubby and I thought it was wonderful. Anxious to see how the leftovers go!

Chef John's Spaghetti alla Carbonara

Wonderful dish. The video helped a lot also. Added chicken and peas to it (also like adding veges to dishes since my young boys will eat them!) and my husband loved it too. I doubled the pasta but did 3 eggs and eyeballed the water (which I added to the egg mixture to help "cook" it) and it was about 1 cup water that I used. Also I did about 4 oz bacon and about 3-4 oz of pancetta.

Caramel Apple Pie I

Turned out great. Used 1/4 cup white sugar, 3 tablespoons brown sugar, 4 tablespoons cornstarch. Used 5 sm-med granny smith apples and 1 honey crisp, and a refrigerated pie crust. Baked for about 55 minutes the night before. Had it for dessert on Turkey day and everyone loved it!

Italian Rib Eye

Made this tonight. Used jarred/dried herbs (1/3 of what recipe called for) and marinated steaks for about 3 hours. Husband grilled them for me and raved about how perfect they were! YUM!
