Butter-Free Peanut Butter Cupcakes

I changed quite a bit. My son is allergic to peanuts so I used almond butter instead of PB, apple cider vinegar instead of white, 2T soy margarine and 1T flax oil instead of canola. I also used 1 C oat flour and 1/8 C pastry flour in place of all purpose flour. He's allergic to corn so I used my home-made baking powder. With that said, these are the MOST AMAZING CUPCAKES I'VE EVER HAD!!!!! The smell was incredible, they are light and fluffy and just oh so delicious! They are a bit sweet, but that's perfect because I didn't ice them. Oh man, these are fantastic! Prepared as I have it's only 150 calories per cupcake. These are fantastic and will become a weekly treat around here! My poor kid, it's nice to know that I can still give him a yummy treat!! Thank you so much Caiti Ann for this superb recipe! :)

Sour Cream Waffles

Amazing! I was out of milk, had weevils in my easy waffle mix and this was a life saver! I even used light sour cream and fat free plain yogurt and they came out amazing. I did make a few adjustments: I omitted vinegar I added 1/2 tsp vanilla I also added 1/4 cup brown sugar Wonderful. Thanks so much Holly George! You saved dinner time!! :)

Excellent! I cut out the sugar all together, and it was still very sweet. I also used sugar free jello. I loved this recipe and there was not a drop left after the party. Thanks for the recipe!!

Simple Whole Roasted Chicken

I made this today for Rosh Hashanah and OMG(gosh)it was soooooooooo great!!! I didn't do veggies under it - I just put some water in the bottom of the pan. Yesterday I soaked the whole chicken in a bath of 1/4 c. sugar and 2 Tbsp salt for about 4 hours to moisten it (this helps chicken a lot), then I let it sit in the fridge overnight with double the spice rub under and on top of the skin. This was the most delicious roasted chicken I have ever had, and I will make this all the time now! Just..... wow.

I used 1 egg plus 2 egg yolks in the dough, and I also took the advice of adding some honey in with the egg wash. Delicious!! I let it rise for a bit too long and they were probably twice the size they should've been, but the baking instructions were perfect. Very tasty! :)
