I was looking for an easy remoulade sauce, and this is it! Just enough kick to really complement the tuna patties I had made but not overpower them in flavor.

Creamed Chicken for Biscuits

A delicious, easy, yet classy dish. The almonds take it up a notch. I forgot to add the green peas but will definitely try to remember next time. This is common enough to serve using left-over chicken, yet fancy enough to serve dinner guests. I used Fat Free Half and Half instead of heavy cream, and I used water/Better than Bouillon instead of chicken broth. It also needed only 1/2 the salt called for, perhaps due to my using Better than Bouillon.

Callie's Mock Frozen Yogurt

This is a great substitute for frozen yogurt! I found it to be so thick that my blender had a hard time chopping everything up, so I added just a little skim milk to help it out. I'll probably use my food processor next time since it does a better job with this kind of thing. I could have eaten it straight from the blender and had "frozen yogurt," but I decided to put it in popsicle molds to share with my granddaughter. She loved it! (I used fat-free vanilla yogurt like what you buy in the dairy section, NOT a frozen vanilla yogurt like ice cream)

Cabbage Waldorf Salad

I loved this, but my husband didn't care for it. I couldn't imagine his not liking it! I will definitely make it again for me. I cut the recipe down considerably, grated my cabbage, and used undrained crushed pineapple because it's what I had.

Sweet and Sour Meatballs in Sauce

We really enjoyed this although it is very sweet. I might cut back a bit on the sugar next time. There was enough sauce to completely fill the 9x13 dish. I noticed the contributor said she doubled the sauce, so next time I will probably cut it in half.

Peppered Meatballs

This is a delicious main dish! I served it over angel hair pasta and got rave reviews from everyone eating dinner. I used only 1 tsp. of pepper in the meatballs and am glad I did. Otherwise, I followed the recipe exactly. This was very easy to put together. Using my small cookie scoop, I got 57 small meatballs.

Green Smoothie

My first green smoothie ever and I love it! I made mine with spinach instead of kale and my banana wasn't frozen. I added ice cubes at the end to chill it more and thicken it a bit. I will definitely be getting all my daily fruits and veggies from now on! (Oops! I just now reread the recipe, and somehow, I also added a 6 oz. carton of vanilla yogurt. Must have gotten it mixed up with another recipe on here)

Healthier Chicken Enchiladas I

I used FF plain yogurt instead of the sour cream and corn tortillas just because I prefer them. I also threw my peppers and onion in the pan and sauteed them slightly, but they were still crunchy, which I like. I also did not roll the tortillas but made them into a layered casserole. I love the addition of red bell pepper and black beans to this healthier version. I enjoyed this dish and would definitely make it again.

Super Bowl Bites

These are wonderful! I used one package of Hawaiian Rolls (12), ground chuck, 2% cheddar cheese, light mayo, and the dry soup mix. I put 1/2 the recipe on one package of rolls, just as the recipe says to do. No soggy bottoms at all. I was a little concerned that they would be too oniony, but they weren't. Definitely a keeper! *** The next day, I wrapped one in a paper towel and warmed it up in the microwave. Still very good!

Curried Chicken Tea Sandwiches

Oh my! This is great chicken salad! I used left-over seasoned chicken in it, trying not to throw it out or waste it. Boy, am I glad I did! I have made this before and subbed lemon juice for the lime and a little regular onion for the green onion with no harm done at all. I always use Hellman's Light Mayo. One time I tried to lighten it up even more by using 1/2 cup plain yogurt and 1/4 cup light mayo. Still delicious!

Baked Onion Rings

Since I am trying to cut calories and fat, I am not frying anything. This recipe lets me get that "almost" fried onion ring taste. The onions really are delicious and crispy. I skipped the 3 bags step but now see the need for them. The breading gets clumpy and won't stick to the onions. Next time I'll follow directions!

Whole Wheat Pizza Dough

I used white whole wheat flour along with the all-purpose flour in this pizza dough and really liked the end result, a chewy texture. I let my Kitchenaid mixer do the work for me, so this was a really easy dough to mix up.

Sweet Vanilla Cupcakes

I've never cared for vanilla cake and have found many homemade cakes to be quite dense. Well, this recipe changed my mind completely! These cupcakes are delicious and have that sugar cookie flavor. They are light and airy and just perfect. I made them to top with sweetened strawberries and whipped cream, but I can't wait to make them again with frosting for my grandkids (ok, ok, really for me!)

Virgin Strawberry Daiquiri

I don't drink alcohol, and I've only had a virgin strawberry daiquiri once. With that said, I really liked this drink. I had a lot of strawberries to use and found this recipe. It's cool and refreshing. After making it according to the recipe and tasting it, I did throw in a few extra strawberries (mine were quite small) and 5 extra ice cubes to get a slushier consistency. *****The next time I made this, I used Splenda, Diet 7-Up, and a handful of frozen strawberries, omitting the ice. It's even better!

Strawberry Fields

I love this Recipe Group week's selection! I made just 1 serving for myself, so I didn't actually measure the salad ingredients. I did measure the dressing ingredients, though. The dressing is sweet yet tangy and uses ordinary ingredients found in my pantry. Definitely a keeper and something I would proudly serve company.
