Apple Butter Pie

This pie was delicious. I used 3/4 cup apple butter as others suggested. The pie was a little runny, so next time I will add another tablespoon of flour. I also used an 8" pie plate and will use a 9" next time. I cooked the pie an extra 15 minutes.

Delicious pie and really easy to make. The green is nice for St. Patrick's Day, but I prefer to make it without the food coloring the rest of the year.

Scottish Bubbles and Squeak Patties

I used coleslaw mix and cooked the onion with it and the carrot. I decided to fry these in a little butter. The patties held together okay, but just didn't seem to brown very well. I added a little flour to the last batch, and they browned much better. I really liked this recipe and will definitely make it again.

Scrumptious Chicken

Scrumptious indeed! I've made this same recipe with Swiss cheese and actually prefer it. But it just goes to show, you can make this recipe with whatever cheese or soup you happen to have in the pantry, and it will turn out just fine.

Yummy Honey Chicken Kabobs

This is my new favorite recipe! I marinated the chicken and veggies for about 5 hours. The meat was juicy tender and full of flavor. I will definitely be making this again. ***Works just as well baked in a casserole dish in a 350 degree oven for about 30 minutes.

This is so good..... Lasagne

Delicious, Carousel-Lady. I used Quorn instead of ground beef and doubled the mozzarella and provolone. Also, since it's just me and my husband, I made two 8 x 8 dishes. I cooked one for dinner tonight and froze the other.

I use 1/2 cup coffee concentrate, 1/2 cup skim milk, and 3 packets of Splenda poured over crushed ice. Mmmmm delicious!

Denver Omelet Pie

This is a wonderful egg pie! It has so many possible variations. I accidentally used up the hash browns I had bought for this dish, so I grated raw potatoes, baked them for 30 minutes, and added them to the dish. It turned out great. I think this would be really good with bacon too. Next time I make this, I will use just a little less thyme, but that's personal taste.

This recipe makes great sugar cookies that are going to be iced or sprinkled with colored sugar. Not too sweet. Just right. I topped with Candice's Sugar Cookie Icing.

Grilled Bacon Potatoes

I made this recipe by the method rather than using the exact measurements. My potatoes were much smaller than baking potatoes, so I decreased all the other ingredients. I also got to try out the tip I had heard that said to slice the potatoes on the bowl of a wooden spoon to keep from slicing through. It works! I baked these in foil in a 400 degree oven for 1 1/4 hours. The men at dinner really liked this recipe. They said it has a salty/sweet flavor that really complements the potato.

This is a dark chocolate cookie with a huge chocolate impact. Delicious! I ended up making 24 cookies and still cooked them for 13 minutes.

Mexican Corn Bread

This is wonderful! I made it in muffin form and minus the canned green chilies because I didn't have any. I can only imagine how much more flavorful it would have been. I cooked the muffins for 35 minutes but will cook them a little longer next time. This needs just a sprinkle of salt, but other than that, they are perfect! I cut the recipe in half and filled each muffin tin full. It made 12.
