Slow-Cooked Corn Chowder

I wanted to make this recipe late in the day and decided to cook it on the stove instead of in the crockpot. It turned out great! Very tasty and flavorful. I followed others' suggestions of adding more potatoes, and I used seasoning blend instead of chopped onions. The extra potatoes may also have solved the problem others had of it being too thin.

Simple Taco Soup

Delicious! I've even made this soup using Quorn instead of ground beef. Still just as good to me. This recipe is quite meaty. I prefer less meat, but my husband likes it this way, so I continue to please the meat eater.

Delicious, healthy apple salad. It's especially versatile because you can use any type of apples, grapes, or yogurt that you happen to have in your frig. I used strawbery-banana yogurt with gala apples and green grapes.

Jim's Cheddar Onion Soda Bread

I made this for Recipe Group just in time for St. Patrick's Day. Like others, I also used green onions and needed just a little more buttermilk for everything to bind together well. Next time, I will mash the dough flatter since it wasn't done in the middle yet the top was nicely browned. I put it back in the oven and tented it with foil to keep it from getting too brown. It all worked out in the end, and I loved the rustic, hard, crunchy crust. I will definitely make this one again!

Healthy Turkey Loaf

I have to say I am very surprised at how good this recipe is. I am a new ground turkey convert, so I am still rather skeptical when I taste a "ground beef make-over dish." This turkey loaf is quite moist and flavorful. I doubled the ingredients, except for the egg, and made it 8 servings rather than 10. Delicious!

Easy and delicious! I prepped it yesterday and slow cooked it today. I used turkey kielbasa, and it turned out great. Probably the best eaten thing on my buffet today.

California Cherry and Walnut Salad

A delicious salad, especially with the addition of the dried cherries. I've had this with dried cranberries before, but I love the bigger punch of flavor from the dried cherries.

This is a wonderful, refreshing "mocktail," punch, or afternoon pick-me-up. It's light and fruity tasting. I made it waist-line friendly by using Splenda and diet 7-Up.

Vanilla Banana French Toast

I must say, I wasn't expecting this to be as good as it was! I really thought the amount of cinnamon was too much, and the color of the eggs was offputting. But it turned out sweet and very filling. I tried to lighten it some by using Splenda for the sugar, 45 calorie a slice wheat bread, 1/2 a banana, and cooking spray for the oil. This would be even better (but not lighter) with the addition of a thin layer of peanut butter!

Easy Weeknight Bacon Mac 'n Cheese

I followed the recipe exactly and really like this mac and cheese. I used Velveeta for the American cheese loaf and chose to use real bacon. This is my favorite Progresso Recipe Starter. The sauce is thin when you mix it all together, but it thickens up plenty as it bakes.

Soft Garlic Breadsticks

Delicious, light breadsticks! I made them per the recipe except instead of using fresh basil, I used 1/2 tsp. dried. I also used 1 1/2 tsp. bread machine yeast. After they were done, I brushed on the butter and sprinkled parmesan cheese on top. My husband and son raved about them and were very impressed I had made them. (Next step, to make them all uniform in appearance)
