Pumpkin Almond Mini Muffins

Loved these muffins for breakfast this fall morning! I had only whole almonds so I chopped them up to put on top. I also omitted the sprinkling of powdered sugar at the end. Delicious way to start my day.

Simply Delicious Chicken Rice Soup

Yes, simply delicious! Such an easy and filling recipe. I used chicken breast meat left over from making Roast Sticky Chicken-Rotisserie Style, omitted the leek because I didn't have it, and sliced up baby carrots. The broth was very flavorful due to the spices. A wonderful soup that I look forward to making again this fall and winter.

Cuddle Up Chili

My husband and I liked this chili. He thought it needed thinning down some, but that's easy enough to do. I followed the recipe except for omitting the jalapenos because I am a wimp with hot things. He would have loved the addition, though. Instead, he added chopped jalapenos and extra cayenne to his personal bowl.

Sweet Deviled Eggs

These were very good, but be warned: they are sweet. I made my own honey mustard and cut the salt in half. They were even better after they sat in the frig for a few hours. I really liked them, but husband asked where the pickle relish was :)

Orange Cinnamon Smoothie

I cut this recipe down to 1 serving using the Change Servings button: 1.5 cups OJ, 3/4 cup vanilla yogurt (I used Greek), 3/4 large naval orange, 1/8 tsp. cinnamon. Because Blender Woman thought this smoothie was watered down, I decided to start with just 1/2 cup OJ. I'm so glad I stopped there because even with that amount, this smoothie was still rather "weak and thin" and not thick as I expect a smoothie to be.

Amazing Muffin Cups

I made several changes with this recipe based on what I had on hand, specifically Johnsonville Italian sausage and Ore-Ida cubed hash browns. I just didn't think the cubes would make that outer crust in the muffin cups, so I cooked the sausage in a black skillet and then added the thawed hash browns and extra orange bell pepper. Then I mixed together my eggs, poured them over the sausage mixture, and sprinkled with chives. I baked the skillet in the oven until a toothpick came out clean. After it had been in the oven a while, I realized I had completely forgotten the cheese, so I just added it on top at the end, and it worked out great. This was a delicious dinner served with a salad, and I'll probably make it the same way again just because it's one-pan easy! ***UPDATE 4-15-14 I finally made this recipe as written - in muffin form. I still like it. This time I served the muffins with grits and orange slices. Delicious for breakfast or dinner!

Best Cream Of Broccoli Soup

I needed to go ahead and cook some fresh broccoli I had in the frig, so this was the recipe of choice. I used FF chicken broth, skim milk, a few stems to make up the amount of broccoli needed, and a sprinkle of salt. My immersion blender was perfect for the job (so glad I bought it when it was on sale). It made a nice low-cal lunch chock full of veggies.

Healthy Frozen Fruit Cups: A Dessert You Feel Good Not Guilty About.

I made this after lunch and then served it to two grandchildren after their naps. They liked it. Then I served it as dessert for my husband and me after dinner. Considering I have not eaten sweets in 8 weeks, I thought it was very refreshing. It's definitely a healthy alternative to sugar laden sweets and snacks and something I don't feel guilty eating. The only problem I see is that the bananas darkened a little. I'm wondering if they will darken even more by tomorrow.

Johnsonville Italian Sausage Sliders

This is such an easy recipe, and the sausage gives these sliders extra flavor. I topped them with pepper jack cheese and grilled onions and then let each person add the condiments of choice. I served them with OreIda Zesty french fries. We would prefer the ratio the other way around with more ground beef than sausage, and I will make them that way next time.

Johnsonville® One-Pan Italian

Three things I love about this meal: It all cooks in 1 pan, it's ready and on the table in less than 30 minutes, and it uses Johnsonville Italian Sausage :) I was able to lower the calories to 449 calories per serving by using Prego Light Smart Traditional Italian Sauce and Ronzoni Smart Taste Thin Spaghetti. 1/5 of the entire recipe was a large serving size for me.

Pumpkin Chipotle Pasta Sauce

I was so excited to make this dish because I love everything pumpkin. Well, evidently not everything. I followed the recipe exactly, but my husband nor I cared for the flavor of this dish. I don't know whether it was the peppers in the adobo sauce or the coriander (neither of which I had had before) or the combination of spices. But obviously, we are in the minority since most of the ratings are very good.

Mediterranean Turkey Pasta Salad

For me, a dressing can make or break a great salad. In this case, the dressing just didn't do anything for me. I loved Butterball's Golden Oven Turkey Breast along with the other ingredients, especially the feta. And adding the pasta was a delightful taste twist. Next time I make this salad (a great light meal for left-over turkey at Thanksgiving), I will use a different dressing and enjoy it much better.

Crustless Spinach Quiche

A delicious meatless entree! I used part-skim mozzarella instead of the muenster cheese, and I added some garlic powder and a little crushed red pepper flakes. Even my husband didn't miss the meat.
