Fried Cabbage with Bacon, Onion, and Garlic

This is such a typical Southern side dish (or used to be), but I'm afraid I've lost my taste for grease. I knew that the directions didn't call for draining the grease, so I'm not going to knock off stars for something I don't care for anymore. (To think, we used to cook all vegetables in bacon grease!) It did have a good flavor otherwise. Since I am salt sensitive, I added salt to my tasting. I might cook this again, but play with draining the grease and adding just a little chicken broth or water to wilt the cabbage.

Banana Sour Cream Bread

A delicious banana bread recipe. Very sweet though. Just know that before you make it. Personally, I will decrease the sugar a little bit next time. It also makes a lot! I ended up making 6 muffins, 9 mini loaves, and one regular 9 x 5 loaf.

Tomato Soup I

I love this soup with a few tweaks for personal taste. I used diced tomatoes with basil, garlic, and oregano. Oh, the flavor the spices gave to this soup was marvelous! I added only 1/2 the sugar called for because of personal preference and might could use even less. Since I cut the recipe in half, I simmered the tomatoes for only 30 minutes. At the end of that time, I used my immersion blender but did not blend the mixture smooth. I then heated the cream in the microwave and added it very slowly while whisking into the tomato mixture. The half recipe called for 1 cup cream, but I had only 3/4 cup which was plenty. I can't believe this will serve 8-12 people. I cut the recipe in half and could have eaten all of it!

Oven Roasted Parmesan Potatoes

Loved these potatoes! I only had russets, so I sliced them uniformly and followed directions. I admit that I did add more parmesan to the tops of the potatoes but only because my parmesan was frozen and didn't stick very well. These are actually crispy on the outside. I will definitely make these again, bellepepper!

This makes a lot, so be aware of that when you make it. This soup is good but needs additional seasoning, which would probably be different for every family. It is somewhat similar to Taco Soup if additional seasoning were added.

Such a fresh tasting dip and one that feels healthy. I used a combo of red and green peppers, omitted one of the jalapenos, and omitted the cilantro because no one in my family except for me likes it.

Sweet and Spicy Sweet Potatoes

A delicious way to fix sweet potatoes! I used only 1 tsp. paprika and omitted the poultry seasoning because another dish I was serving had poultry seasoning in it and I didn't want two dishes with the same flavor.

What child (inner child even) wouldn't like this? This sandwich certainly brought a smile to the face! Chocolate chips for the eyes and a red hot for the nose work just fine when one is out of raisins and cherries. Thanks for the idea, T. L.

Hot Carmel Apple Juice

This drink is ok but not my favorite of the spiced apple drinks I've tried on this site.The juice becomes thick (which doesn't appeal to me), and all the spices settle in the bottom of the cup.

Spinach Quiche

Perfect for my weekly meatless meal. Add a salad and you have a great dinner. I squeezed the water out of the spinach by hand before putting it in a pan and warming it. I had 3 oz. too little cheddar, so I added that amount of mozarella. It worked just fine. I also omitted the croutons hoping to cut calories just a bit.

Saltine Toffee Cookies

Wow! I couldn't imagine saltine crackers making something that tastes this good! The bonus is that it is an inexpensive food gift you can give for the holidays. (I think I would prefer milk chocolate chips on this)

I become very nostalgic when I think of Snickerdoodles. It was the cookie my grandmother always made when I would spend two weeks with her during my summer vacation from school. While these don't quite measure up (would any recipe unless she made them?), they are awfully good.

Classic Goulash

Good comfort food for a cold winter night! Definitely too much salt for our tastes. I cut recipe in half and used only 1 tsp seasoned salt. Next time, I'd like to use regular salt and a little less than this time. I added green pepper and liked it.

I made these exactly by the recipe, browning them first. They seemed a little tough to me. I've made porcupine balls where you don't brown them first, and I think I like those better. I might try these again omitting that step.

Cocktail Meatballs
