Overnight Refrigerator Oatmeal

This is a great baseline recipe for you to tweak according to what your tastes are or what you happen to have available. It's easy enough to change out the type of milk, yogurt, or fruit. I used unsweetened almond milk, non-fat vanilla Greek yogurt, and bananas in one small jar and blueberries in the other. I also needed some Truvia to sweeten it up a bit. Half the recipe was plenty for my breakfast.

Simple French Toast in a Cup

The whole purpose of anything you cook in a mug in the microwave is to make eating quick and easy. This recipe does that with a few easy-to-remember ingredients that cook up just fine in the microwave. The cinnamon is perfect for me, but if I were to fix this again, I would add a little more sugar. Like another reviewer, I stirred the bread into the liquid. Seems as though it would set better if all cubes were slightly moist. Most mug recipes are for eating quickly or on-the-go, but this morning I wanted to treat myself, so I turned my French toast cup out onto a pretty tea and toast set and slowly enjoyed my breakfast.

Pork Carnitas with Cilantro Tomatillo Sauce

I followed the recipe exactly, adding 1 cup water in step 2. The cooking times were perfect. This was my first experience eating pork carnitas and tomatillos, and I am happy to report that it was a positive experience. I added sour cream to mine, and my husband added haberno sauce to his.

Sweet and Spicy Salmon with Grapefruit Salsa

I made the salsa, tasted it, and decided it was going to be entirely too tart and too hot, even though I used sweet red grapefruit and only 3/4 of the jalapeno. However, I decided to taste it with the salmon first. I am so glad I did! Somehow, the flavors were perfect with the fish, and no extra sweetener was needed. Nor was it too hot. How is that possible? I don't know, but I had to have a bite of salsa with every bite of salmon. Very complementary, and it was pretty enough for guests.

Chicken Zoodle Soup

Another great way to use my Padermo and zoodles! Love this soup! The seasonings are perfect. I used left-over turkey breast that I added at the end as well as zoodles left from last night's dinner.

Spinach Alfredo Sauce (Better than Olive Garden®)

This is a very quick and forgiving sauce. I had less than the needed amount of cream, so I added just a little more cream cheese. I also used some fresh spinach I had frozen for smoothies. I just followed the general instructions, added some left-over turkey breast from the night before, and served it over pasta for my husband and zucchini noodles for me. Delicious!

Zucchini 'Noodles'

My daughter gave me a spirooli, which cuts the zucchini and yellow squash into spirals. This was the recipe I chose to make "zoodles." I loved the flavor and decided I prefer squash cut this way rather than in rounds. So much better and slightly crispy rather than soggy and limp! The first batch I followed the recipe exactly. On the second batch I decided to see what the difference would be if I omitted steps 1 and 2. No noticeable difference, so I'll take the shortcut next time. I also served the cooked squash topped with a garlic and basil tomato reduction. Another delicious way to eat it!

Cherry Vanilla Smoothie

A good base recipe that easily adjusts to one's own personal preferences. I used almond milk instead of soy and Truvia instead of agave. The cherry flavor was nice for a change.

Simple Turkey Chili

I liked this and was very pleasantly surprised that the ground turkey didn't stand out, probably due to all the spices. I used petite diced tomatoes instead of crushed, and I didn't mash the beans or add the black pepper. I did add more salt. My husband liked the fact that this chili was soupy. Definitely a good choice for dinner tonight!

Honey-Garlic Slow Cooker Chicken Thighs

Easy to make and uses pantry staples. Always a very good thing! I doubled the chicken thighs (but not the rest of the ingredients) and put half in the freezer for a quick meal when I need it.

Cheesy Stuffed Shells

Delicious recipe! I found I had way too many shells, though, yet the box I bought was only 12 oz. Wondering if I filled the shells too full. At any rate, a delicious dish which I will definitely make again.

Apple Pie by Grandma Ople

Slow Cooker Salsa Chicken

This is a keeper for sure! Easy, delicious, and filling. Used salsa style fire roasted diced tomatoes instead of the Rotel because it's what I had. Used it tonight as a filling for tacos. Thinking about using the leftovers in soup of some kind. The husband who rarely rates any recipe high gave this one 5 stars! He thought it was better in a hard corn tortilla as opposed to a soft one.

Healthier Potato and Cauliflower Soup

I followed the recipe exactly. It seemed thick enough to me after blending it, but I followed the cook's note and continued cooking for another 30 minutes. The cauliflower taste was not as strong after cooking it the extra time. Next time I make this, I will decrease the white pepper for my own preference to 1/2 teaspoon and then add more if needed. I love that this soup has only 58 calories per serving!

Such a delicious, fresh-tasting smoothie! I used frozen berries, almond milk instead of the soy, and 1 packet of Truvia instead of the agave. Next time, I will use a frozen banana, too, to make it slushier.

I couldn't believe this orzo and rice combination was as flavorful as it was with just butter, onion, garlic, and a can of chicken broth. I followed the recipe exactly. It was the perfect accompaniment for salmon.

I love smoothies, and this one is no exception. I used nonfat black cherry greek yogurt because it's what I had as well as flax seed instead of the oil. Delicious way to start the day!
