1-Dish Pepperoni Cheese Pizza Bake

I just didn't trust the step of mixing the crust in the pan. I didn't want it to stick to my black skillet, so I mixed it in a bowl prior to shaping it in the pan. Like others, I put the crust in a cold oven, set the temp (yes, it works), and baked it for 10 minutes before adding the other ingredients. Next time, I will bake it for 15 minutes. Now, for the changes: I used 1 pkg. of RapidRise Yeast and 2 1/4 tsp. instant yeast. It's what I had. I also sliced up eight 1-oz. mozzarella sticks because that's what I had, but I didn't need 8 and used less. Like others, I think you could easily get by with 1 1/2 cups grated cheese. This really is a very easy pizza to make and tasted ok to me (but I'm not a pizza connoisseur).

Quick and Easy Mexican Chicken

I made this dish "quicker and easier" by omitting the step of browning the chicken in a skillet. I also marinated the chicken in Cajun Seasoning before I decided to make this, so I omitted the cumin. I added the cheese at the end rather than cooking it the entire time. My husband really liked the flavor of this chicken dish and I found it to be extremely easy, so I will definitely make it again.

Pineapple Casserole

I used 1/2 cup sugar and that was too much. I also should have mixed the flour and sugar in with the pineapple rather than just pouring it over the top. I believe that would have solved the problem of too much juice in the bottom of the casserole. I also think there was too much cheese on top. I omitted the saltines and butter as a personal preference. I like pineapple casserole but prefer a different recipe from this one.

Connie's Sweet and Sour Christmas Meatballs

I used Italian breadcrumbs rather than just the bread, and I added garlic powder to the meatballs. Certainly, you could add whatever you like in your meatballs. I like the sauce, and especially appreciate that it calls for ingredients I keep on hand.

Lemon Berry Tartlets

I've been looking for something to do with my one sheet of puff pastry, and this was perfect! The technique works great although I did have to let my dough thaw longer than 2-3 minutes to get it to open up. I made these lemon berry tartlets for an early Valentine dessert, and they looked very elegant. Can't wait to try it again using pudding or mousse or even flavored whipping cream.

Light Pimento Cheese

I used store-bought pimiento cheese spread to make this. I would suggest you buy the best tasting pimiento cheese the store has to offer. I also put it on my homemade Amish White Bread. Personally, I would have given it 3 stars because the pickle relish seemed to overpower it. My husband, on the other hand, actually liked it. He said it was tangy and more flavorful than regular pimiento cheese.

Easy and Delicious Crusty Popovers

This is my first time making popovers. While they did fall (no, I didn't open the oven door), they still tasted like the ones I've eaten elsewhere. I made some strawberry butter for them and enjoyed them for breakfast.

Company Casserole

I didn't care for the cinnamon in this recipe. My gut told me to take it out and add garlic powder and Italian Seasoning, and I will next time. I also ended up using double the tomato sauce. I baked it covered with foil to keep it from drying out too much. This is actually a poor man's lasagna recipe, and one I will make again with my changes.

Bear's Spinach Muffins

I wanted spinach balls tonight. I had seen this recipe and thought it would be similar, especially if I made them as mini muffins rather than regular size. I'm glad I did. I really think this recipe could benefit from extra herbs like sage, thyme, and basil. I also wish it had had an amount for the salt. I added salt, but not enough. I enjoyed these tonight as a side but in the future will use my personal spinach ball recipe over this one.

Iced Mocha Cola

I used Diet Coke since it's my cola of choice. I also mixed the coffee into the half and half because I didn't think it would mix well otherwise. When the Coke meets the coffee and half and half, it puts on a big fizz show. Might be fun for a few minutes, but the taste just isn't something I care to experience again.

Onion, Garlic, Cheese Bread

I kneaded this in my bread machine but took it out to rise, first in a bowl and then in the bread pan, both times using the heating pad set on low. I just don't think my bread rises well in the machine. I then baked it in the oven on 350 for about 25-30 minutes. I used extra sharp white cheddar cheese. All flavors (garlic, onion, and cheese) are very strong, which I liked!

Mexican Lasagna Lite

I was trying to use up all the groceries I actually had in the house before going to the store and came across this recipe when I plugged refried beans into the ingredient search. I used ground chuck, made my own taco seasoning and enchilada sauce, and combined mozzarella and cheddar cheese instead of using the Mexican blend. I also used only 9 corn tortillas. To make things easier, I spread the refried beans onto the tortillas as I laid them in the pan. This turned out quite good. No one would ever believe I was toward the end of my groceries!

Homemade Enchilada Sauce

I hate to admit this, but I don't use enchilada sauce enough to know a good recipe when I see it. So I took the advice of the other two reviewers and added more cumin and onion powder. It seemed to be too much sugar to me, but perhaps it's supposed to be that sweet.

Broiled Tilapia Parmesan

I'm still learning to broil, so the fact that I couldn't get the topping to brown is my fault, I'm sure. I followed directions and broiled the first side 3 minutes. Then I turned it over and broiled it for 2 more minutes. I added the topping and continued cooking for 3 minutes. I was afraid to keep broiling the fish for fear it would be tough, dry, and overcooked. It turned out delicious, even though it didn't get crusty brown. I'll definitely try this again.

Chocolate-Hazelnut Marble Cake Scones

Before you even read this review, please know that I'm one of THOSE people. I completely ignored the dairy-free ingredients because I didn't have them and I wanted to use up some flavored coffee creamer I had. I used real butter and International Delight Almond Joy coffee creamer. Because the creamer is so sweet, I did not sprinkle sugar on top of the scones before baking. I also made them into squares and cut 9 of them. They turned out pretty sweet, but perfect for an evening dessert with a cup of coffee. I would make these again, perhaps with a different flavor creamer even and cut them smaller next time.

Easy Mexican Hot Chocolate

I used a sugar free hot chocolate mix that I already had, but otherwise followed the directions. This is just okay for me, not a favorite. It certainly is fun to try something different, though.

Marinated Ranch Broiled Chicken

This is now a favorite marinade. I marinated the chicken for 1 1/2 hours and then broiled it. It was flavorful and juicy. Definitely a keeper.

This was exactly what I wanted for dinner tonight. It was simple, yet flavorful, and the perfect accompaniment for when you want the entree to be the star. If you want heat from the crushed red pepper, you will need to increase the amount.
