Simple Beef Flavored Gravy

Yes, this is simple and it's beef flavored, and the best part is that it uses common pantry staples. It's great to make in a pinch when you don't have any meat drippings or beef broth in the house. I used it to go over rice.

Pecan Dijon Chicken

I couldn't decide whether to make this or not after reading all the reviews. I decided to make it but tasted the sauce before adding the mustard powder. I decided not to add it. The sauce is very thin upon coming out of the oven, but after it sits a bit, it thickens up and makes a nice sauce over rice. I like the crunch of the pecans in this dish.

Chef John's Swedish Meatballs

This review is for the gravy part of this recipe only (although I'm sure the meatballs are fabulous too; after all, this is a Chef John recipe). I made Johnsonville Italian Meatballs and, as an afterthought, decided I wanted a Swedish meatball dish. So I began looking and decided to make this sauce. It is a little bit thinner than what I've had before, but that didn't bother me at all. I didn't add any extra salt or pepper since my meatballs used hot Italian sausage. I served the meatballs and gravy over angel hair pasta.

Yogurt Chicken

I was afraid I wouldn't like the yogurt and lemon juice coating, but I loved it! This is such delicious, moist chicken. I give it 4 stars but only because the recipe calls for regular bread crumbs instead of Italian style which lend much more flavor.

Spinach Lentil Soup

This is a delicious soup, and I left out the meat! I can only imagine how good it would be with the kielbasa. I wanted a lighter lunch, packed full of veggies, so I added more carrot, onion, and diced red pepper, as well as red pepper flakes. (You can add to your own liking - mushrooms, celery, etc.) I saw no reason to cook the rice first, so I just added it in with the lentils to cook, replacing all the water with chicken broth. I halved the recipe and am so glad I have leftovers for more lunches this week.

A healthy, tasty afternoon snack to tie me over till dinnertime. I didn't have the soy milk powder, but it didn't seem to matter. This is certainly a smoothie that will stand up well to variations, like using vanilla yogurt in place of the plain.

Whole Wheat Carrot-Raisin Muffins

I cut the recipe in half and used white whole wheat flour. I also had to use plain yogurt sweetened with honey to taste because I discovered too late that I was out of vanilla yogurt. Because of others' reviews about the muffins being too dry, I added 1 T. unsweetened applesauce. I got exactly 7 muffins, but they did have to cook a few minutes longer. The end result was a moist, slightly sweet muffin. This certainly tastes "healthier," but since I'm trying to cut sugar and unnecessary fats, it's perfect for me.

Spicy Cheese Quick Bread

This is a dense, bread that's tender on the inside and crusty on the outside with a predominant flavor of Italian seasoning and cayenne pepper. I used fat-free half and half and skim milk. This bread was the perfect accompaniment for soup.

Tasty Lentil Tacos

Such a healthy substitute for ground beef tacos with no flavor lost! I made my own taco seasoning using Taco Seasoning I, and I used an entire can of chicken broth which was 1 3/4 cups. A great meal for Meatless Monday.

No-Bake Chocolate Coconut Cookies

I don't understand how people can have such different results from the same recipe! I followed the recipe exactly and even went back and checked proportions and directions. These turned out extremely dry for me, and I had a hard time getting them to hold their shape without crumbling and falling apart. I like that they don't have peanut butter and do have coconut. I just think the proportions of liquid to dry ingredients is wrong somehow.

Slow Cooker Baked Potatoes

I followed directions exactly, cooking my potatoes 4 hours on high but they were overcooked. I suppose it depends on how large/small the potato is as to how long they need to cook in the slow cooker. I'm sure with practice these will come out perfectly and be a time saver for busy days. I topped mine with Reduced Fat Yogurt Ranch Salad Dressing instead of butter and sour cream to make them lighter in calories.

Garlic Chicken

I like the garlic being warmed in the oil; I just think it's more oil than what I want to use, especially when I'm trying to eat healthier. I was afraid the dry bread crumbs with no other seasonings would be bland, so I used Italian bread crumbs. I still would prefer to add more spices next time, like basil and rosemary and thyme.

Winter Green Salad

This review is for the dressing only. I was looking for a MyPlate homemade salad dressing and came across this one. The ingredient list looks very strange to me. I'm not sure I would have ever made it had all the reviewers before me not given this salad a glowing report. I'm so glad I did though. The dressing is delicious, and just a little gives great flavor to the salad. Definitely a keeper!

Oatmeal Pancakes II

I scaled this recipe down to one serving - one large pancake for my breakfast. I omitted using the food processor and just shook it all up in a blender/shaker cup, which worked quite well. I was surprised at how delicious these pancakes are on their own without a topping of any kind. However, I discovered that after I had topped mine with unsweetened applesauce, cinnamon, and a sprinkling of walnuts. ***I made these pancakes again 3 days later when a grandchild spent the night. This time I used the blender and the full recipe. Oh, and I use regular milk, not buttermilk. These are the best homemade pancakes I've ever made. Love them!

Roasted Asparagus with Parmesan

Cinnamon Yogurt Dip

I really want to give this 5 stars but can't because of the amount of cinnamon called for. Surely, it's too much, and I love cinnamon! I cut the recipe in half and used only 1/2 tsp. cinnamon (should have been 1.5 tsp.) However, play with the amount to suit your own taste because this cinnamon yogurt dip is delicious on fruit and makes a wonderful snack or even healthy dessert for after dinner.
