Almond Butter and Blueberry Smoothie

To be perfectly frank, this recipe seemed strange to me, but it piqued my curiosity. I couldn't imagine putting the almond butter and the blueberries together. But strangely enough, the flavor was good! Both flavors came through without too much competition from each other. I used frozen blueberries and added the 2 ice cubes as well. Nice and thick and cold, just the way I like my smoothies.

Strawberries and Creme Wannabe Frappuccino®

The only change I made was to use Truvia instead of sugar. Next time, I will use frozen strawberries and no ice so that the frappuccino isn't watered down.

Spaghetti with Broccoli Florets and Traditional Sauce

I'm used to meat being in my spaghetti sauce, so perhaps that is why I thought it was a little bland. But this is a good way to go meatless AND get a veggie in.

Thin Spaghetti with Garlic, Red Pepper and Olive Oil

I'm afraid I'm in the "this was too blah" camp. I think the garlic, red pepper flakes, and cheese all need to be doubled...or maybe even tripled. It is very quick to make though, which is a very good thing.

Vegan Banana Ice Cream

Love the flavor that the cinnamon and pecans add to this! Personally, I prefer just a little added Truvia, but that's a preference. The process for this recipe works to make a soft serve ice cream, or wait a few minutes (or blend longer) for a thick, drinkable smoothie.

Mango Walnut Salad

I love salads with fruit in them. I had a mango I needed to use and found this recipe. So glad I did. Sara, the submitter, suggested we leave it plain or serve it with our favorite vinaigrette. I usually prefer a white balsamic vinegar dressing, but this time I added a light cream cheese-orange dressing I had made for another salad and it was delicious.

Orange Salad with Cinnamon Dressing

My! What a refreshing and different salad! Fresh, light, and fruity! I admit I added only half the cinnamon because I've had several bad experiences lately with cinnamon in recipes that no one has reviewed before me. I loved the flavor from adding the zest. I'd definitely make this again, especially for a ladies luncheon.

Watermelon Juice

As the recipe submitter suggested, I used crushed ice instead of the water because I wanted a slushy drink. Just a suggestion, you may need to adjust the sugar depending on how sweet your watermelon is. Mine wasn't very sweet, so making this drink out of it was a perfect way to use it.

Baked Garlic Parmesan Chicken

The best review for this chicken is that it was totally approved by the 3 yr. old grandchild! Personally, I would prefer the chicken coated in butter rather than olive oil. I did use Italian style breadcrumbs and lightly salted the chicken which probably helped give it more flavor.

Baked Kale Chips

There's a learning curve with making these kale chips. Knowing the amount of olive oil and salt to use comes with experience since "bunches" are different sizes. I got mine too salty this first time, but next time I'll know better. A fun, good conversation piece!

Delicious and Easy Corn on the Cob

I always cook my corn on the cob in the shuck in the microwave for delicious, crispy corn. This corn tasted just as good and my husband didn't have to burn his hands shucking the corn. He says this is the way he wants his corn from now on :)

No Mushroom Beef Tips

My family loved this! I always use lite soy sauce and did in this recipe as well. I also used Better than Bouillon beef flavor for the beef bouillon cubes. Next time I will use less or use lower sodium beef broth. It was a little salty to me, but I didn't salt the noodles so all was well. I also wonder if flank steak sliced really thin would be more tender than the stew meat.

Banana Peanut Butter Smoothie

I like the fact that this smoothie has fewer calories in it due to the powdered peanut butter and the unsweetened almond milk. I really like the peanut butter and chocolate combo. However, I don't care for the cinnamon flavor in it...and I really like cinnamon, just not in this particular smoothie. I will omit it the next time I make this drink.

Roasted Asparagus and Apple Salad

I like this salad very much. I failed to read the other reviews before making this yet cut the honey in half, just as the others did. I took the photo but then ended up adding grilled chicken and strawberries to make our dinner entree tonight.

Gluten Free Protein Pancakes

I cut the recipe in half and still had 4 large pancakes! The egg whites measured 1/2 cup. I used a 1/4 cup measure for each pancake. The batter is very thin and does end up making rather flat pancakes, but put strawberries and blueberries on top, and you have a delicious, no-sugar added, very filling, healthy breakfast!

Spinach and Goat Cheese Salad

This is a very basic salad to which so much more can be added, but which if left simple, is still quite tasty and healthy. I added my favorite dressing - golden balsamic vinegar. Other times I add strawberries and shredded chicken for a heartier lunch. But any way you fix it, this salad is delicious!
