Roasted Yam and Kale Salad

Zucchini Parmesan

Ooh this is so surprisingly good! I added turkey sausage and sauteed mushrooms to the zucchini before I put it in the oven, and also I poured some of the liquid off about half way through the cooking time. It was still a little watery, but I think next time I will saute the zucchini before I bake it because I like my squash a little stiff when I eat it.

Baked Teriyaki Chicken

This is my go-to recipe if I want something other than regular baked chicken. Definitely better on dark meat chicken (sorry ppl who only eat chicken breast, this may not be for you lol) and I always double the sauce. But definitely a keeper. I will be feeding this to my future children lol

Garlic Mashed Cauliflower

Pretty good, considering I dont like cauliflower at all. I dont have a food processor, so I had to improvise with a hand mixer. It wasn't bad, not great either, but I added some butter to it and pretended it was mashed potatoes and it tasted better lol

BBQ Chicken Pizza II

My two 10 year old nephews loved this pizza!! I got the personal pan pizza crusts from the Dollar Tree, (2 in a pack) and they were actually really good! I think the key is to use as simple a BBQ sauce as possible, I got the $.99 honey BBQ sauce from Aldi. I fed two growing boys very inexpensively lol. Thanks for the idea!

Turkey and Quinoa Meatloaf

This was great! I just so happened to have some quinoa, and figured I'd give it a try. The only thing is I can never get the loaf to stay in a loaf shape. It eventually spreads almost flat across the whole baking pan. But it still tastes delicious!

Turkey in a Bag

I made my very first turkey for Thanksgiving all by myself using this recipe and it was great! The turkey wasnt dry, it was nice and brown. Kinda difficult getting the turkey in the bag and the stuff in it, but it was worth the hassel!
