Wacky Cake VIII

Very good recipe! I mix it all up in a bowl first and then pour it into a greased pan. Also made a glaze with 2 Tbsp. butter, 3-4 Tbsp. cocoa powder, 3/4 cup powdered sugar and 3Tbsp hot water. Melted the butter, added the cocoa and then the powdered sugar. Added the hot water to smooth it out. Pour on warm cake and let cool. =)

Chocolate Covered Marshmallows

I made these for my son's scout troop and they loved them! I did half semisweet and half milk chocolate chips and then dipped them in rice crispy cereal for some added crunch. I also used the giant marshmallows, which I think were a little too big but a fun visual. =)

St. Louis Toasted Ravioli

These are pretty good. I think I prefer them baked then fried. I took the suggestions from a few other reviews and baked them in the oven at 375 for 30 minutes. Also sprayed some grease on the pan before placing the coated ravioli on there.

Bacon Cheeseburger Cake

This was a fun cake to make! A little stressful in the beginning because I didn't have any brown food coloring for the bun, so I used a little chocolate frosting in the vanilla frosting. I also used some green dye in the coconut flakes for lettuce and only did the ketchup and mustard. For the seeds on top of the bun, I used slivered almonds. Brought on great excitement in my son's classroom.

Best Lemonade Ever

Very good recipe! I didn't add in all of the simple syrup and I added the rind from 1 lemon. Gives it a more refreshing taste. Tastes great when you stick some in a bowl, put it in the freezer and make it a little slushy like.

Plum Cake

Very good cake! Reminds me a lot of my Mom's Pflaumenkuchen. I made it in a springform pan and sprinkled some cinnamon on the batter before laying the plums on their sides. Right before I put it in the oven I sprinkled with some sugar and then 5 minutes before it was done I sprinkled a little more sugar over to form a little crust over the cake. I did not separate the eggs, I just added them whole to the butter and sugar and mix them in well. =) ****** Update: I made it again and used only 2 eggs which made the dough less rubbery and also added in about 1/4 tsp. of salt. Put fresh peach slices on top this time. Really good!

Classic Waffles

Very tasty waffles! Just made them and enjoyed them very much. I also did as other had suggested with whipping up the egg whites and then folding them in at the end. I got 6 waffles out of this.

Boston Baked Beans

Super easy and delicious beans. I soaked the beans overnight and in the morning threw all of the ingredients in the crockpot. Cooked on high for 7 hours and they came out perfect. I added a bit of bbq sauce and chili powder. I couldn't find navy beans in the store so I used northern beans, worked just as well.

Best Spanish Rice

I was making my Chicken Enchiladas for dinner and need a quick side dish. Figured this recipe looked easy and had lots of good reviews. Luckily I had all the ingredients on hand. After reading some of the reviews I made a few changes as others found helpful. First while softening up the onions I added in a little garlic. I did not brown the rice, just sauted it before it started to color up. I was using a long grain rice so I added in an extra 1/2 cup of broth and also a couple tablespoons green chillies since I had some left over from my enchilada recipe. I sealed the pan with foil and the lid and did not peak until the 20 minutes was up. Came out nice and fluffy, a little brown on the bottom, but it had a nice flavor and happy it wasn't all clumpy.

Apricot Tea Cookies

Nice tasting cookie! Instead of rolling out the dough to make squares I dropped spoonfuls on the cookie sheet and made a dent to put the filling in. I didn't chop up the apricots very fine, next time I will.

Zucchini Bread IV

Really good recipe! Very close to my Mom's recipe. I used 1 cup white sugar and 1 cup loose packed brown sugar instead of the 2 cups white sugar. It made 1 loaf and 7 muffins. Definitely a keeper!

Pork Chops for the Slow Cooker

I only used 2 pork chops that were extra thick and frozen. I just threw them into the crockpot and as others had suggested only used 1/4 cup soy sauce instead of the 1/2 cup. I also used fresh ginger and chopped up 1/2 an onion. The meat was so soft it just fell apart so I just shredded it up on the sauce and put it over rice. Might add some pepper flakes next time to spice it up a little.

Baby Back Ribs

Very good and juicy ribs. I used the rub as posted by Cathy under most helpful reviews. Wasn't quite excited by the rub, but loved the idea of doing ribs in the oven and having them come out as nicely as they did. I put the bbq sauce on 30 minutes before being done and then broiled them the last few minutes. I also didn't have baby back but the regular rack of ribs.
