Best Spanish Rice
I was making my Chicken Enchiladas for dinner and need a quick side dish. Figured this recipe looked easy and had lots of good reviews. Luckily I had all the ingredients on hand. After reading some of the reviews I made a few changes as others found helpful. First while softening up the onions I added in a little garlic. I did not brown the rice, just sauted it before it started to color up. I was using a long grain rice so I added in an extra 1/2 cup of broth and also a couple tablespoons green chillies since I had some left over from my enchilada recipe. I sealed the pan with foil and the lid and did not peak until the 20 minutes was up. Came out nice and fluffy, a little brown on the bottom, but it had a nice flavor and happy it wasn't all clumpy.

Jewish Coffee Cake
I decided to give this recipe a try this morning. I used brown sugar instead of the confectioners sugar, as others had suggested. I also added a bit extra of sour cream as other suggested as well. It was moist, tasty and pretty simple to whip out as I was half awake sipping my coffee. I think next time I will try the original amount of sour cream, it was alittle too moist in my opinion.

Pork Chops for the Slow Cooker
I only used 2 pork chops that were extra thick and frozen. I just threw them into the crockpot and as others had suggested only used 1/4 cup soy sauce instead of the 1/2 cup. I also used fresh ginger and chopped up 1/2 an onion. The meat was so soft it just fell apart so I just shredded it up on the sauce and put it over rice. Might add some pepper flakes next time to spice it up a little.
