As written, the pie does not have nearly enough flavor. I tasted it before adding the eggs, and it was so... blah. SO, I added two additional teaspoons of cinnamon. The flavor was great. However, the pie was very DRY and almost gritty as if I had used ricotta cheese. Maybe that's because I used extra cinnamon? I honestly can't see 2 tsp of cinnamon absorbing THAT much moisture, though.
On the other hand, my boyfriend said it was the best pie he's ever had, but as a pumpkin pie lover and a seasoned baker, I will definitely not be making this again. I'll definitely be going back to the old sugar and evaporated milk recipe.
