Pumpkin Pie Bread

Great recipe! Instead of halving the recipe and using a full can of pumpkin like some other reviewers did, I kept the original amounts but actually used 2 15-oz cans of pumpkin in this batter. And last year Jello came out with pumpkin spice instant pudding mix - I threw that in there too. Poured it into 2 8 1/4 x 4 1/4 loaf pans - it made 2 really good-sized loaves. Moist, delish and pumpkiny! I had to bake them for almost an hour and a half - if you do it this way, start checking at about 65-70 minutes (although it'll probably still be really runny at that point).

April's Chicken Fried Rice

I had some leftover jasmine rice, cooled, so I diced up some chicken breast, seasoned it with onion powder, garlic powder, salt and black pepper, then tossed it in flour and sauteed it in sesame oil. When it was almost done, I put the rice in the skillet with the chicken and sesame oil, threw in a few splashes of low-sodium soy sauce, and fried it up. When it was done, I stirred in a sprinkling of garlic salt. I didn't have any vegetables on hand and I HATE eggs, but next time I think I'll throw in some baby corn and water chestnuts (not a fan of vegetables, as much as I'd like to be). I'd already eaten dinner - hence the leftover rice - so I packed it for lunch today and it reheated great! Good ideas and a good base recipe!

Sour Cream Coffee Cake III

Pumpkin Turkey Chili

This looks SO good - I love turkey, and I love pumpkin. I love comfort foods on a cold day, especially when they can be made healthy, and I love Mexican/Tex Mex/Southwestern food. But I hate tomatoes and bell peppers! I'm seriously ready to cry over here...I want to try this so bad. I'll work on substitutions. 5 stars for tempting me to tears ;)

Cinnamon Coffee Cake II - low fat version

Thanks for posting this! The original recipe looked great but I'm always trying to make stuff did exactly what I would do but removed the trial and error for me :) I'm just going to go one step further and make muffins out of them - instant portion control!

Buffalo Style Chicken Pizza

I make something like this all the time. Same amount of chicken, but cubed and sprinkled with celery salt (since I'm not a fan of real celery but like the flavor), sauteed with cooking spray and tossed in just enough Frank's Buffalo Wing sauce to coat each piece. 1/4 to 1/2 cup ranch dressing spread over the crust, topped with half mozzarella/half cheddar (provolone is even better) with the chicken on top of the cheese. Add some chopped fresh cilantro, bake till bubbly and golden brown and it's delicious!

Quick Chicken Soup

Pretty good! I had leftover grilled chicken and some orzo from dinner last night, but didn't feel like eating the same meal for dinner tonight, so I made this soup (using chicken stock and not broth since that's what I had). I heated up the stock, carrots and seasoning, diced up my leftover chicken and threw it in a few minutes before taking it off the heat, and then added the orzo last (since it was already cooked and I didn't want it to get mushy). A great way to doctor up leftovers!

Easiest Focaccia Recipe

Thank you so much for posting this! I am new to bread-making and love artisan breads, but they can get really pricey. I found this recipe, decided to try it, and it was great! I don't see why people are complaining about the directions - I had no problem comprehending the part about adding water a tablespoon at a time. I will say that it took longer than half an hour to rise - I let it sit on top of my preheated oven for about 50 minutes before it looked to be the right size - and definitely will add salt to the dry ingredients next time, as the garlic salt I sprinkled on top was tasty but not enough. All in all, a perfect recipe for a beginner, one you can tweak to your liking and one I will make over and over again!
