Asparagus and Cashews

This was delicious. My husband and I both loved it. I will definitely be making it again, although with much less oil. For a veggie dish, this was pretty greasy (though very flavorful). I would also leave the cashews whole rather than chopping them up.

Corny Corn Bread

This was good & very easy to make. I especially like the addition of corn to the recipe, which was something I didn't find in my cook books at home. Definitely a recipe I will keep in mind for the future.

Red Potato Salad

This is a great alternative to the traditional potato salad. I switched it up a little bit by throwing in a few shredded carrots. I also used a healthy amount of fresh chopped dill in place of the dried dill. I love the smell & taste of this salad with the fresh dill, and it was a hit with everyone! Even my 5 year old daughters had a bit, and it's rare for them to try anything with the word "salad" in the title.
