Artichoke Spinach Lasagna

This was very good. Drained the artichokes and reserved the liquid. Added vegetable broth to make 14oz. Used 2 pkgs. frozen spinach and the no-boil noodles. Did not use the feta cheese and cut up the artichokes. Baked as directed. Will make this again!

Garlic Butter Sauce II

My girlfriend made this last night!!! Great stuff! She used regular egg noodles, added about 2 Tablespoons butter to the olive oil and garlic(from the jar as we use so much)!!!! Steamed some broccoli crowns and threw in some left over asparagus!! We have some Parmesan cheese we ordred on line that we grated on top and with red pepper made a great meal!!! We will be making this one of our must have meals!!!

Mexican Rice III

Very good! My Spanish girlfriend calls this Spanish rice, since you fry the rice. Whatever....it's good. I drained a can of diced tomatoes and combined juice with vegetable broth for 2 cups fluid total; 3 mini, multi-colored sweet peppers for color; combined onion and rice together and sauteed until rice just began to brown; added cilantro just before serving.

Potato and Bean Enchiladas

Good stuff! I use black beans, an unpeeled sweet potato, and salsa in place of the ketchup. Stirred the potato and spices halfway through the first 20 minute bake and added an 8 oz. can of tomato sauce. I made individual enchiladas and only needed 10 tortillas. 2nd time: we added about 1/4 cup green chili for moisture and spice; fixed this as a double layer casserole; heat through at 325 after combined for about 30 minutes. We only use about 1/2 a bunch of cilantro and a "Mexican" 4 cheese blend.
