Perfect! The only thing I changed was substituting unsalted sunflower kernels for the pine nuts. A cup of pine nuts was over 12 bucks at the grocery. The same amount of sunflower seeds was 1.40...

Sweet Potato and Hazelnut Mashed Potatoes

This does go very well with the Shitake / Port reduction tenderloin. The texture is very smooth, like a puree. The nutty / earthy hazelnut flavor is very nice.

Beef Tenderloin in a Port Shiitake Reduction

The reduction is a keeper, for sure. Personal taste, but I think I'm going to try it again without cubing the tenderloin.

Maple Baked Beans

I made this for the third time, using stovetop method to reduce liquids a little more...and added a dash of fennel. By the way, adding some little smokies is a great way to make quick beanie weenies.
