Couscous with Mushrooms and Sun-Dried Tomatoes

Easy and delicious! Instead of portobello I used regular white capped mushrooms. Served the dish with over roasted asparagus for a healthy vegetarian meal!

you can just buy a jar of pasta sauce and cook in some turkey and call it a day. no need for a recipe. nothing special.

Orzo and Wild Rice Salad

This took a bit longer than I thought probably because of the time it took to cook the wild rice. BUT this was simple in that it's not fancy and doesn't require any cooking. You can add any veges you'd like to this too. I replaced the currants with dried cranberries and added an asparagus instead of green/yellow bell peppers. I would definitely double the dressing because it was all soaked up the next day not leaving much flavor. Used dark balsamic vinegar instead of white also.

Bake Sale Lemon Bars

Yikes! The bars over baked at 20 minutes! and why is the bar so thin?? Next time I'll bake at 15 minutes and use a smaller pan. But the flavor was good.

Tart Lemon Triangles

I had one lemon in the fridge and wanted to try making my first lemon dessert. This did the trick. EVERYBODY in my family loved it and they usually don't like anything that's too sweet. Only complaint is the crust. I don't have a food processor so I tried using the magic bullet. That didn't work so I had to try breaking down the butter with my hands/fork/knives. By that point, when I tried to press it into the pie pan, it got real sticky and the dough stuck to my hands. So it's my fault really, but the taste was worth it!

Made this with bone-in chicken thighs and added curry powder. Simple recipe to make on nights when you're out of ideas. Served with oven roasted veges and brown/white rice.

Butter Snow Flakes

A simple and quick recipe. I fridged it as directed and it wouldn't come out of my cookie press (too hard) so I had to bring it back to room temp. My cookie press is plastic...maybe that's why.

Cranberry Orange Cookies

Followed the recipe as is and came out just fine. Nice blend of cranberries and orange. For my preference, I would make the sugar mixture to drizzle over my cookies although some reviewers were okay without it. It helped balance out the tartness of the cranberries.

Spicy Chicken Rice Soup

Used rotisserie chicken from the store and added in corn and mushrooms. Subbed the rice with whole wheat pasta. Sauteed the carrots and onions with the spices first before putting everything together. Wonderfully easy and heartwarming dish for the sick boyfriend =). Definitely double the broth too.

Cinnamon Coffee Frosting

I liked this a lot! Nice coffee flavor with a hint of cinnamon. I dissolved the instant coffee and cinnamon into a tiny bit of hot water as another person suggested to get rid of the grainy texture. I frosted this over some chocolate cupcakes. MmmmMmMm!!

Fiesta Stuffed Peppers

I precooked ground turkey in place of the raw beef. (Using raw beef just sounds plain scary). Other adjustments: add cheddar cheese to the mixture, skip the egg and salsa, added a can of fire roasted tomatoes. This can very easily be adjusted to your tastes. This was served with the mexican rice recipe from this site.

Vegetarian Quiche

Made this using vegetables I had lying around the fridge such as broccolli and cheese. You can very easily play around with this recipe to your liking. Made the cheesy quiche crust recipe on this site to go with the quiche.
