Simple Southwestern Chicken Salad

Very good, although lacking something. Definitely doesn't need a whole packet of taco seasoning. Use lots of cilantro. Also added frozen corn. Yum!

Cast-Iron Skillet Prime Rib Roast and Gravy

I typically doctor up recipes to my liking, this time I used the recommended ingredients. Only needed 2 minutes on each side to sear on med high cast iron, 3 minutes would have overcooked. I used a lot more red wine than called for, which really hit the spot as the ribs were roasting. I also added the stock over time - only about 2/3 of recommended- to allow it to reduce. I have tried several of the rib roast recipes on this site, and while all of them have been good this one is the absolute bomb. There are lots of ways to roast a rib, but the cast sear is THE way to go. And the from scratch gravy is basic but it dominates - I recommend adding it to everything you serve.

It's good, but waayy too much vanilla in my opinion. One teaspoon is plenty! Otherwise it's perfect. Might I also suggest sprinkles?

Pumpkin Ravioli with Hazelnut Cream Sauce

Very good. I have been searching for the ultimate pumpkin ravioli for years after having had it while traveling. I would say that the hazelnuts are unnecessary (and so time consuming anyway). I used a lot of spinach instead of the sorrel and substituted large shells. Next time I'll only fill each shell about half full, as I found the filling to pasta ratio a bit high when completely stuffed. Very close to "the one". Definitely recommend a white sauce not tomato based or even a pesto on this one (and the one included here is pretty good).

Addictive Mashed Potatoes

Not bad, but definitely not worth the calories/ fat grams or time and effort. I love mashed potatoes so was looking for a recipe that would encourage my children to like them too! No such luck, and very heavy, though that isn't a surprise. Save your time and just use the onions, butter and some salt and (I recommend white) pepper!

Black Beans con Jalapeno

Awesome! My family loved this recipe. I did leave out the picante and the jalapenos because my 4 year old doesn't like anything too spicy. We used it on soft tacos with refried beans. A very healthy option and it was so tasty we didn't need cheese! Will add tomatoes next time if we do it as an entree again! Thanks for the awesome recipe, never knew what to do with hominy!

Fluffy Pancakes

This is really good. I made a few of the changes and doubled the recipe (which I recommend for a family of 4). I used butter instead of shortening, 2 1/2 tbls of sugar, vanilla and cinnamon. Yum!

Indian Chicken Curry II

Not bad, but definitely not a 5 star. Would leave out lemon juice as another reviewer suggested as well as cook the spices beforehand. I also should have used full fat coconut milk. With those changes the flavors should be stronger and the sauce creamier.

Slow Cook Thai Chicken

Only ok, I also do a Peanut Butter Noodle from this site that is the same basic thing and MUCH better. To be fair I used lemon instead of lime juice and only used 1/2 cup peanut butter which is why I gave this a 4 star.

Sweet and Sour Pork Patties

Awesome! My picky 2 year old and not quite as picky husband and 4 year old ate this up. I sauteed half an onion and half a green pepper as well and added with the sauce at the end. Would probably add twice as much or more of both next time. Also halved the amount of red pepper because of the aforementioned children and still had a nice kick. Thank you!

Zesty Porcupine Meatballs

I love this receipe. Definitely needs more sauce, maybe 4 cans of soup and 1/2 c worchestshire sauce. I also mix, put on a chopping board and then cut out my meatballs. 20 minutes at 400 without sauce, then add sauce for an additional 10 to heat up and voila!
