Easy Cauliflower and Broccoli au Gratin

Used a Normandy blend of vegetables. It went over very well at our family reunion. So good and easy, too!

Cake had good flavor and constistancy, nice rise in the oven. I must have filled them less than half, as I had 48 cupcakes, which was fine. The filling was ok. Used a spritz maker to fill the cakes, but was not satisified with the end product. Don't think I'll do the filling again, but definitely will do the cake again

Slow-Cooker Chicken Tortilla Soup

Holiday Punch I

This tasted great, but the color was bland, so I added Cherry Kool-Aid and was glad that I didn't add sugar, or it would have been too sweet. I also froze cubes of the punch (w/o the ginger ale) for the punch bowl so it would not dilute the punch. My daughter liked the cubes so well that she wanted more punch cubes to have to snack on. Very good!

Hamburger Potato Casserole

This was so good! I doubled into a 9x13 pan. Used 1 can cream of mushroom and 1 can of Campbell's cheese sauce. Very tasty and the kids took thirds!

Honey Nut Granola

Really good! I used half the sunflower seeds and upped the oatmeal. I don't think that it will make it to the container, before it is eaten up!

Irish Brown Soda Bread

Super easy to make. Flavor is lacking, but would be good with soup. Very thick, moist bread. Not enjoyed by my family, though.

Chicken Tortilla Soup V

Wow! I made this for a soup supper at church. I let it simmer in my crock pot all day. I didn't have cumin, so used Penzey's Adobo seasoning, and threw in some extra. It will be made again ... definitely ... only we won't share it!

Eggplant Parmesan I

Frying the eggplant only makes it soak up the oil. I had trouble with sticking to the pan and ended up boiling the eggplant which added to the prep time.
