Taffy Apple Salad III

Loved this stuff! Made it twice and it was better the second time around with the addition of an extra cup of marshmallows. Will be making this for the next carry-in at work.

Turkey and Stuffing Casserole

I subbed the deli-style sliced turkey that I had in the fridge and added the 1/3 cup chopped onion that was also in there. Used the rest of the can of chicken broth to dilute the soups, and also added about 1/4 cup dollop sour cream to each soup to use that up as well. Omitted the sage since I didn't have any. Turned out just a little on the salty side, probably due to using chicken broth to dilute the soups. Otherwise really good!

Slow Cooker Chicken Tetrazzini

This couldn't have turned out better! I used Philly cooking cream (Savory Garlic) in place of the cream cheese but stuck to the recipe otherwise....my picky daughter was glad to come home to this after her track meet; she ate a big plate full! We used penne pasta and there was plenty of sauce to cover it. Looking forward to these leftovers!

Chuck's Favorite Mac and Cheese

Made this for Easter dinner with the family. Should have made a double batch, it went that quick! Added extra as other reviewers suggested to keep it from being too dry, used 1/2 cup but probably could have bumped it up another 1/2 cup and been ok. Added garlic and onion powders to the macaroni mix and paprika to the panko I used on the top. Definitely will be making again!

Campbell's Kitchen Beef Stir-Fry

Yum yum! Followed the recipe other than substituting minced garlic for the garlic powder, both the hubby and I loved it! I have lots of leftover veggies, so we're having this recipe again tomorrow but with chicken and chicken broth rather than beef. Lookng forward to more yummy!

Pork Brine

Used this for a pork loin and it turned out fantastic! Used 1/2 cup sea salt and 1/2 cup kosher salt (just because this was all I had, I don't use table salt to brine meat). Added a bit of liquid smoke and about an extra quart of water to cover the pork loin in my brining bucket. 3 lb loin, brined for about 6 hours (it turned a funny whitish color), roasted uncovered at 350 for an hour to juicy, fork-tender results! No problem with excessive saltiness that some reviewers complained of.

Iowa Maid-Rites

I'd never even heard of Maid-Rites until I stumbled across them on an unrelated web search, and had to try them. I had a can each of beefy mushroom and golden mushroom soup, so that's what went in the pot with the beef (seasoned with salt, pepper and garlic powder) and onion soup mix. 3 hours in the slow cooker and a little added beef broth yielded yummy tender meat, much better than what I thought initially looking at the simple ingredients. Not sure if the flavor is authentically Maid-Rite, but it sure tastes good!

Emergency Chicken

We thought this was just ok. Agreed with the reviewer that said fresh ingredients would have helped this dish. I do give it points for ease of preparation. Doubt I make this again for me and hubs, but will keep the recipe for when the grandkids come over because it seems very kid-friendly.

Chicken Pot Pie IX

I had such high expectations for this recipe that I bought 4 5-inch casseroles....and ended up thinking it was money very well spent! Doubled the recipe and stuck to it with only a couple of minor changes (adding garlic and sage and leaving out the celery and celery seed I didn't have). Used store-bought pie crust too, brushed with beaten egg right before popping those beauties in the oven. They were wonderful, my husband cleaned out his casserole, looked at me, smiled and patted his belly; his seal of approval!

Healthy Banana Cookies

I make a version of these cookies that uses applesauce and 1/4 c almond milk in place of the oil, and add raisins, dried cranberries and pecans. No flour, no added sugar and no dairy. These cookies were a different kind of sweet than I was used to but grew on me quickly....they are great for breakfast with some almond milk!

Beef and Guinness® Stew

My fiance ate 2 big platefuls with mashed potatoes for St. Patrick's Day. Rich, warm comfort food for this still-freezing March! Froze the leftovers and I know they'll be even better later! Followed recipe as written and it was wonderful.

Mayonnaise Biscuits

Decided to try these to go with sausage gravy for Sunday morning breakfast...cut dough into square biscuits and they baked up like perfect little pillows. Lucky we got any by the time the two teens were done hovering over the pan! A keeper for sure.
