Fish Tacos

i mostly chose this recipe for the sauce and i'm so glad i did! the only thing i changed was to leave out the oregano and to use half the amount of mayo. turned out spectacularly! tangy and spicy and full of flavor. as far as the fish goes, i just covered some tilapia fillets with a decent amount of cajun seasoning and grilled them for a few minutes til they were moist and delicious. what an awesome combination! the cajun spices perfectly complimented the tangy sauce. throw on a little freshly made pico de gallo and some avocado slices and you've got an unbelievable delicious AND healthy dinner!

Grandma Johnson's Scones

oh my goodness! these were fabulous! i tweaked the recipe quite a bit to make it healthier and it still turned out fabulous! here are my suggestions for tasty AND nutritious scones: use 3 cups whole wheat flour, 1/2 cup milled flax seed, and 1/2 cup wheat germ in place of the all purpose flour. use plain nonfat yogurt in place of the sour cream. i also halved the amount of sugar and used brown sugar instead and it was still PLENTY sweet! i threw in some slivered almonds and dried cherries and added a little cinnamon and nutmeg to the dough. these were hearty AND delicious and you would never guess they were packed full of nutritious goodness!

Simple Whole Wheat Bread

delicious! this was my first attempt at bread making and it took two tries for me to get the proper results. the first time my dough didn't rise AT ALL and after retracing my steps and doing a little research i realized the water i'd used was WAY too hot and it killed the yeast. the second time around got the results i was looking for. puffy, chewy, delicious wheat bread. thanks for a fabulous recipe for a first time bread maker!

Salmon and Spinach Fettuccine

tasty! would have given it 5 stars except i changed the recipe a bit. i used grilled salmon in place of smoked, used nonfat milk, only used half the parmesan called for and left out the tomatoes (didn't have any) and used whole grain angel hair pasta instead of fettuccine. and i doubled the spinach! so good! i was impressed that even when you cut the fatty ingredients down it still tasted amazingly rich!

Chicken and Corn Chili

Great chili. Very hearty and satisfying. Didn't give it five stars because I thought it was a little bland. Next time I'll add more spices. Found that it was actually tastier the next day. Overall, a very good basic chili recipe.

Tangy Slow Cooker Pork Roast

I was hesitant to try this recipe after reading some of the negative reviews but I went ahead and did it anyway and was very pleased with the results. The pork loin came out juicy and flavorful. The only change I made to the original recipe was to substitute minced garlic for the garlic powder and to use only 1/8th cup of sugar. Oh, and I added 1/4 teaspoon of cayenne pepper as I did not have hot pepper sauce. The roast was delicious and I served it with rice pilaf. After dinner I shredded the leftover pork and put it back in the pot with the remaining juices and onions and let it sit in the fridge overnight. Then for dinner the next day I made pulled pork sandwiches on wheat hoagie rolls with swiss cheese and tomatoes and they were delicious. Very tangy and full of flavor. I will definitely hold on to this recipe.

Spaghetti ala Bolognese

This was delicious! I am not usually a fan of spaghetti but the sauce was so thick and flavorful I couldn't stop eating it. I left out the stewed tomatoes because I don't care for them and I added about a half cup of water and doubled the tomato paste. Turned out beautifully. This will definitely be a repeat recipe.

Savory Chicken Breasts

This recipe was delicious! I did add 1 T of mustard and 1/2 tsp. of worcestershire sauce to the soup mixture to add a little zip and I followed the advice of fellow reviewers and melted the butter together with the bread crumbs. Overall, very moist and tasty!
