Quick Coffee Cake

I've made this many times with these changes: I always double it and use a 9x13 pan. I use mayonnaise instead of the shortening and it keeps the cake moist and tender. I use 1 cup of sugar in the cake (doubled recipe). A keeper!

Breakfast Cake

i was in a pinch and needed breakfast but didn't have eggs, so i tried this. i used mayo instead of shortening (also not on hand) and it turned out fine with that. I also doubled the brown sugar for the top. It doesn't rise much and comes out like a dense but moist cake about an inch thick. baked for the time stated and it was fine. also, i just mixed the wet, mixed the dry, then combined the two and that was no problem either. Good recipe :)

Glazed Pumpkin Donuts

added 1/4 cup white sugar and 1/2 tsp more pumpkin pie spice to the batter and used buttermilk instead of regular milk. Made 14 regular sized donuts. baked at 350 for 13 minutes in a donut pan. made the same glaze but half of the recipe size and it covered 11 donuts. the donuts were good with or without the glaze. Note: if you have never used a donut recipe for baking, the dough is not 'pourable' it's thick and sticky and you have to plop it in the pan and shape it into the mold.

Sweet, Sticky and Spicy Chicken

Awesome recipe. Definitely toss chicken in flour before browning. I also did not have fresh garlic or ginger in mine, just shook a little of the powder in there from the spice rack. I taste tested the sauce on plain rice to get the flavor and heat I wanted before putting on the chicken. A word of caution though, mine was VERY SALTY. Will use low sodium soy sauce next time. Used 2 chicken breasts and added some broccoli and garnished with toasted sesame seeds. Served over rice. YUM!

Rice Balls a la Tim

Chocolate Chip Banana Muffins

these were very moist and just sweet and chocolatey enough. here are my adjustments: baked at 375 for 17 minutes. subbed whole wheat for all purpose flour. subbed apple sauce for all but 2 TBS of the oil. Only used 3/4 cup of semi sweet chocolate chips. Added 1/2 cup chopped walnuts. FYI the 1 1/2 cups of mashed bananas was equal to 4 small/medium sized bananas. yummy!

Best Chocolate Chip Cookies

I used to sell cookies and these are every bit as good as the ones I sold. I made them exactly as directed. They are beautiful, not flat or crispy or greasy. They have a nice firm outside and chewy inside and are not dried out or mushy. I will try these next time without the walnuts. I baked them right away, then I tried after the dough was in the fridge for a couple hours, and then I baked more after the dough had been in the fridge overnight. Every time they turned out perfect. I had them bake on parchment paper at 350 for 12 minutes each time. Divine when warm with a glass of cold milk and they get better the next day when stored in a sealed container at room temp. Thanks a million times for the recipe :)

this was FULL of fruit. (it measured to about a cup and a half) it was a little more 'cakey' then i expected, but moist and hearty. would make a great breakfast or snack during physical activity.

Penne with Chicken and Asparagus

This was really good. I marinated my chicken in italian seasoning before cooking it. I added a little extra sliced garlic and used 1 cup of broth in stead of 1/2. It was just moist enough. I also added a 1/2 can of artichoke hearts, but it really didn't need it.
