Rice Balls a la Tim

cut the rice by half and added a little dried basil, other then that, made as directed. would be very good on meatball sandwiches too!

Chocolate Chip Banana Muffins

these were very moist and just sweet and chocolatey enough. here are my adjustments: baked at 375 for 17 minutes. subbed whole wheat for all purpose flour. subbed apple sauce for all but 2 TBS of the oil. Only used 3/4 cup of semi sweet chocolate chips. Added 1/2 cup chopped walnuts. FYI the 1 1/2 cups of mashed bananas was equal to 4 small/medium sized bananas. yummy!

Best Chocolate Chip Cookies

I used to sell cookies and these are every bit as good as the ones I sold. I made them exactly as directed. They are beautiful, not flat or crispy or greasy. They have a nice firm outside and chewy inside and are not dried out or mushy. I will try these next time without the walnuts. I baked them right away, then I tried after the dough was in the fridge for a couple hours, and then I baked more after the dough had been in the fridge overnight. Every time they turned out perfect. I had them bake on parchment paper at 350 for 12 minutes each time. Divine when warm with a glass of cold milk and they get better the next day when stored in a sealed container at room temp. Thanks a million times for the recipe :)

this was FULL of fruit. (it measured to about a cup and a half) it was a little more 'cakey' then i expected, but moist and hearty. would make a great breakfast or snack during physical activity.

Penne with Chicken and Asparagus

This was really good. I marinated my chicken in italian seasoning before cooking it. I added a little extra sliced garlic and used 1 cup of broth in stead of 1/2. It was just moist enough. I also added a 1/2 can of artichoke hearts, but it really didn't need it.

Chocolate Chocolate Chip Nut Muffins

yum yum yum. made adjustments to oil, milk, cocoa and salt as suggested by other reviews. left out the sugar and almond topping completely. they were delicious! made 18 muffins and the chocolate chips and walnuts really 'made' them. so great.

Old Fashioned Pineapple Upside-Down Cake

great cake. used a 9x13 baking dish instead of a cast iron skillet. don't think it would have fit in the skillet. used regular flour instead of cake flour, and vanilla instead of almond extract. Also, added 1/2 cup of the pineapple juice from the can and left out the little bit of melted butter completely. it was really yummy.

Basic Crepes

forgot the butter completely and they turned out great. i left out the salt and put in about a tablespoon of powdered sugar. mixed all the wet then gradually added the dry. when they were finished, i put blackberry all fruit spread inside and whipped cream on top and they were off the charts good.

Creamy Au Gratin Potatoes

i used the cheese sauce for mac 'n cheese too (with 8 oz of cooked macaroni noodles). Man, is this ever good! Left out the onions and just added a little onion powder when I added the salt.

Egg and Sausage Casserole

Only gave 3 stars because you MUST make changes for this to turn out well, and after you make the changes... it's a different and great recipe. Used 10 eggs, 3/4 cup milk, 2 Cups cheese. Baked for 40 mins to get the eggs to set up.

Shepherd's Pie VI

I skipped the mashed carrot part entirely and added 12 oz of thawed peas/carrots mix to my meat mixture. It was great. I also accidentally put 1/4 cup minced garlic in the potatoes in stead of just a Tbs and I couldn't tell at all. Needed salt though.
