Miss Betty's Super Quick Dinner Rolls

I have been making these for years when I find myself short on time and groceries. If you approach this recipe as a basic biscuit rather than a dinner roll, I think you will not be surprised by the result. I always use a fine whole wheat flour with baking powder (1 t) and salt (1/2 t). I've tried many add-ins, but typically go with cracked pepper and garlic. I also pat them lightly into balls and bake them on a pizza stone at about 400 for 15 minutes. I simply think they look better this way. Thank you, Miss Betty!

Vegetarian Black Bean Enchiladas

This filling is so good that I might have to make it alone as a dip sometime. The sauce is great too with the cilantro and lime. Next time I might add a jalapeño as well. Flour tortillas definitely hold together better than corn, but though with corn it might be more of a casserole, it will still be delicious.

Todd's Famous Blueberry Pancakes

My family loved these. I even used frozen blueberries and didn't let them sit and they were great. Very fluffy and flavorful. The only change was to use half whole wheat flour. Thank you!

Brownie Cups

We love brownies and my family thought these were among the best! The crust seems crumbly at first but after they're cooked everything holds together perfectly. Omitted the nuts and made them in mini muffin tins baked for about 12 minutes. Thank you!

Cornbread Pancakes

I used 1 c. whole wheat flour and 1/2 c. cornmeal, slightly less butter than called for and half the sugar. These were a big hit. They were definitely not too dense or heavy and didn't have as grainy a texture as cornbread (as some reviewers experienced). I beat the wet ingredients really well before folding them in to the dry very gently. Maybe that helped? We love pancakes in this house and will be making these again!

WWII Oatmeal Molasses Cookies

These were a huge hit. I used dark molasses in an equal amount. (I don't like molasses as a condiment, but it really makes these cookies!) I added cinnamon, eased back on the sugar about 1/8 cup and used apple sauce for half of the shortening (butter for the other half). I spooned by the tablespoon and baked for 10 minutes. It made about 3 dozen plus a couple. They were soft and chewy, but not dense. Might do chocolate chips next time for the kids, but so delicious with raisins! Thank you!

Oatmeal and Wheat Flour Blueberry Pancakes

Used regular milk with a little vinegar, added some cinnamon and vanilla. Huge hit! My family loves pancakes and this was a nice addition to our current rotation. Thank you!

Roast Salmon With Balsamic Vinegar

Needed a quick recipe so I didn't marinate at all. Used fresh rosemary and extra garlic. Delicious--all three kids and husband cleaned their plates and all but one went back for seconds. Thank you!

Caramel Popcorn

Halved the butter, as suggested. Made the perfect amount for a scant 5 quarts of popcorn, but I can see how some might like more candy than popcorn and would want to double the syrup. Totally addictive! Cleanup was easy--any hardened sugar in the pans soaked right off in warm water fairly quickly.

Fancy Fruit Pizza

Not crazy about orange, so I used apricot preserves instead for the glaze. Made one with the glaze and one without. They were equally devoured and adored. A beautiful and easy dessert to serve company.

Portobello Penne Pasta Casserole

My family loved this! I reduced the margarine by half (and used butter) and the sauce still came out beautifully. I might try a different mix of cheeses next time. I reduced the soy sauce too, since I was a little uncertain about that addition. My family thought it was great as it came out, though if I do the same next time I will add a dash of salt.

Easy Chocolate Chip Cookie Dough Truffles

So easy and fun for the kids to make. I bet you could lighten it with fat free milk and light butter--will try that next time. Easy to improvise with ingredients too. We used crushed Heath bar and added some graham cracker crumbs. My husband thinks they're better than buckeyes!

Granny Kat's Pumpkin Roll

So easy and everyone loved it. Served with vanilla ice cream. I made it on a 15X11 jelly roll pan and baked for about 13 minutes. The only thing I will do differently next time is mak sure that the batter is spread evenly so that the middle of the roll is thicker. This can lead to cracking when rolling the filling in.

Salsa Chicken

Always a hit here. It's really hard to overcook the chicken with this for some reason. I think it has to do with the salsa acidity. I've found that the kick of the salsa mellows when cooked, so even a fairly hot salsa is tolerated well by all in our house. Also, rather than taco seasoning (was out) I used cumin and garlic and it worked well.

Homemade Black Bean Veggie Burgers

The texture of this burger is great and it mixes up and cooks well--and looks beautiful. With all of the onion, garlic and spices I added, I was very surprised at how bland it turned out. I used beans dried beans, so perhaps it was lacking salt that you can get from canned? I will certainly make this again, but maybe add more hot sauce and chili powder. Thanks!

House Fried Rice

In my family of varying palettes, this was a hit with all. Easy to modify, as well. I mixed the sesame oil with canola for a higher smoking point. Also, after sauteing the meats and veggies, I removed them form the pan, added a bit more oil and fried the rice to give it a little crunch. Then I whisked in the egg, added back the veggies and seasoned with the soy. SO good!
