Miss Betty's Super Quick Dinner Rolls
I have been making these for years when I find myself short on time and groceries. If you approach this recipe as a basic biscuit rather than a dinner roll, I think you will not be surprised by the result. I always use a fine whole wheat flour with baking powder (1 t) and salt (1/2 t). I've tried many add-ins, but typically go with cracked pepper and garlic. I also pat them lightly into balls and bake them on a pizza stone at about 400 for 15 minutes. I simply think they look better this way. Thank you, Miss Betty!

Vegetarian Black Bean Enchiladas
This filling is so good that I might have to make it alone as a dip sometime. The sauce is great too with the cilantro and lime. Next time I might add a jalapeƱo as well. Flour tortillas definitely hold together better than corn, but though with corn it might be more of a casserole, it will still be delicious.

Todd's Famous Blueberry Pancakes
My family loved these. I even used frozen blueberries and didn't let them sit and they were great. Very fluffy and flavorful. The only change was to use half whole wheat flour. Thank you!
