Lloyd's Healthy Chicken Zoopa

This is the best chicken noodle soup I've had! I would've never thought to add those veggies...a terrific combination, as it turns out. The only problem I had was that I had to add way more liquid than it called for. Also, I didn't do the extra work of sauteing the veggies first and it turned out great.

Strawberry Pie II

Yummy! Per previous reviews, I mashed less of the strawberries (1/3) and added a little less water (2/3 c)...just what it needed! I also covered the crust with melted chocolate, as suggested. That was a great idea! It prevented sogginess and tasted great too. Also, make sure you let it chill for at least 3 hours. I took it out after 2 hours, and it was pretty runny. I think it needed another hour or two to set.

Five Flavor Pound Cake I

Excellent recipe. I got lots of compliments. I made as written, with the exception of changing some of the extracts. As other reviewers have said, it doesn't really matter which ones you add so long as you add 5 tsp. I chose lemon, butter, vanilla, almond, and orange.

Tomato Chicken Parmesan

As written, I give it a 4, but with a few changes, definitely a 5. You will need at least a full jar of pasta sauce (24 oz) which is twice what the recipe called for. I would have preferred a little bit more than that even. As others have said, you can half the eggs and bread crumb mixture. Otherwise you will end up having to through the rest away. I baked the breaded chicken for 20 minutes instead of frying because it was easier and didn't require frying in oil. Also, I used provolone instead of Monterey Jack cheese...much tastier. With these changes, it is wonderful and SUPER easy. It is about the quickest, fancy dish a know how to make. I've impressed a lot of company with it.

Butternut Squash Casserole

I love this recipe! I have made it several times exactly as written. Many people who say they hate squash tell me they like this recipe. A great way to sneak some veggies in for the kids. My kids think it is desert.

Robbi's M&M Cookies

As did other reviewers, I also used butter instead of shortening. I think all cookies are better with butter. I followed the recipe to a T beyond that. I recommend keeping the cookies small because they spread out too much and look not so pretty if you make them big. Of course, this might happen less if you use shortening or if you chill the dough first.

Deliciously Sweet Salad with Maple, Nuts, Seeds, Blueberries, and Goat Cheese

This is a really wonderful salad! A great way to get kids to eat lettuce. I made the following substitutions (using what I had): almond slices instead of walnuts, feta cheese doubled omitting the goat cheese, red instead of white balsamic vinegar, and canola oil instead of grapeseed. I didn't have sunflower seeds either, but I think that it was still fine because of the almonds. The dressing was awesome. I recommend mixing the dressing together first before pouring on the salad because you might find that you don't need the full amount.

Best Chocolate Chip Cookies

This is an awesome recipe. I have made it several times as is. The last time I made it, I used half whole white wheat flour (with a little extra soda) and it turned out really well! It's also great with M&Ms.

Oatmeal Bread II

Although this has become my go to bread recipe, it is not quite perfect yet, and I am still experimenting to try to get it to be exactly like I want it. Here's what I know: if you use oil/marg/butter you'll not even notice the difference, so just use your preference. Usually I use 1/2 WW flour which turns out well. Per other reviews, I plan to add flaxseed, other seeds, and raisins with cinnamon in future attempts. Until the last loaf, I have been baking it in my bread machine, but this time I baked it in the oven and liked the result much better (i.e. no hole in the middle of the loaf). I baked it at 325 for about 35 minutes and it turned out nicely. On the yeast issue, I haven't experienced a problem of too much yeast, but I use bread machine yeast (2t) which requires less than active dry yeast.

Whole Grain Pancakes

This is my favorite healthy pancake recipe. I always use sour milk (1 c. milk to 1 T lemon juice) instead of buttermilk. Since I don't have flaxseed meal, I either grind up flaxseeds in a blender or I substitute wheat germ.

Rempel Family Meatloaf

This is great, kid friendly meatloaf. Everyone loves it. You can just throw everything into a bowl and mix it all together with your hands; the extra steps aren't necessary. I always use 1 T Worcestershire sauce and 1 T A1. Although it's best with buttery crackers, when I don't have them I substitute for other crackers or bread crumbs and that is good too. Also, I always do the ketchup/honey/Worcestershire glaze, which my mom did too. Don't forget to use lean beef. One time I didn't and it was a greasy mess.
