Best Peanut Sauce

This is a nice base to start with but the peanut butter is really over powering to the other ingredients. So I would suggest maybe adding more of the other ingredients to suite your personal taste. I did not add the hot pepper sauce because I wasn’t going for a spicy peanut sauce. It is really personal preference, but this is a simple sauce you can cater to your family’s taste buds.

Mini Meatball Subs

These little bit sized mini subs of tastiness, are keepers for our family! I would have given these 5 STARS if I hadn't tweaked it to make it healthy. First I used 97% lean ground turkey instead of ground beef to lower the fat and calories. I left out the green onion and decided to sauté the onion before adding it to the meatball mixture to add a little more moisture. I was able to get 15 nice sized mini meatballs. I jar my own marinara which has all fresh ingredients so I chose to use that for the sauce, I used whole wheat rolls for the subs, and I also used low moisture, low fat mozzarella.

Bacon Wrapped Dates Stuffed with Blue Cheese

These were very delicious with a couple of adjustments. Blue cheese is too bitter in our opinion so we used Capricho De Cabra, which is a nice creamy Goat Chesse, almost like cream cheese. We also only cooked them for 25 minutes and our bacon was a nice crispy texture. Next time we think we will try using a hickory smoked bacon to complement the other sweet flavors.

Lime Chicken Soft Tacos

This was so delicious! I doubled the sauce because I felt just one batch of sauce did not add enough flavor. I also sautéed some jalapeños and added them to the sauce for a little heat. YUMMY! We will be having this again really soon!

Savory Cheddar Zucchini Muffins

I was really excited to make these sadly they were bland. It needs at least 2 to 3 more bacon slices and maybe and extra 1/2 cup cheddar cheese or even a sharp white cheese added. It also needs a tablespoon of mixed herbs such as rosemary and thyme. I will try these again with these alterations and update my post.

Chicken and Bacon Shish Kabobs

These were wonderful! This is now our families favorite marinade for kabobs. I followed the recipe just as stated except I left out the green onion only because my husband does not care for that flavor. I used maple curried bacon to add a little sweetness to the chicken and it was a big hit!

Chicken Tortilla Soup II

This spicy little number was a big hit with the hubby!! I did make a couple changes. I only used 3 tablespoon of canola oil. I added ½ teaspoon of red pepper flakes to step up the heat. I did not cook the tortillas in the soup because they would have become a soggy mess. So I added them to the actual bowl before serving. I also used my slow cooker to roast a whole chicken so I had fresh stock and moist chicken to add to the soup. I added a couple drops of lime juice and shredded cheese to serve.

Yummy Honey Chicken Kabobs

These kabobs where a BIG hit! They lived up to all the reviews. Make sure you soak the skewers for a couple hours or they will burn on the grill. I also added pineapple to my skewers and it added the perfect touch.

Fresh Peach Pie II

Way to sugery! I cut the recipe in half to make only one pie and I wish I would have cut the sugar in half after that as well. I didn't have any cornstarch so I used flour instead. For every 1 tablespoon of cornstarch I used 2 tablespoons flour.

Grilled Peanut Chicken

The peanut butter flavor was to overwhelming on the chicken for our taste. I gave this a three only because our 2 year old really enjoyed it but he would also live on peanut butter if we let him!

Chimichurri Sauce

I used cilantro and 1/2 cup basil to suite my families taste. For those who haven’t ever made this sauce you DO use the stems, it adds a nice texture. I also added 2 tablespoons of lemon and pepper to taste.

Chicken Oreganato

Even though the ingredient list is short don't be fooled! This recipe is packed with flavor. Be careful to keep an eye on the chicken because the oil will splatter and might smoke in the oven at that high of a temperature.

Brown Sugar Meatloaf

My husband hates meatloaf so I've been trying to find a recipe he might like and I had high hopes for this one...sadly it was a failure. The recipe calls for to much brown sugar and ketchup, only 1/4 cup of each is needed and should be placed on top not the bottom. I also sautéed the onions in Worchester sauce before adding them to the meat mixture, which added a nice texture.

Whole Wheat Refrigerator Rolls

Very yummy rolls but the recipe calls for to much all-purpose flour. That's the only reason why I rated it a four. I only used 3 1/2 cups and that was plenty! I also put a little cheddar cheese on top of them before I baked them and it was a wonderful addition! This is now one of my staple recipes.

Big Ed's Cajun Shrimp Soup

I used organic brown rice which made the cooking time much longer for my soup and I also used fresh herbs from my garden. The flavors were a bit bland for my taste but my husband and son enjoyed it.

Wonton Wrappers

I rated this recipe a four because the recipe calls for way to much flour. I believe the reason people were having trouble rolling the wraps out is because the extra flour makes the dough tough. I used only 1 1/2 cups flour and the dough rolled out perfectly.
